March Musings: 2016


Holy April Batman!

Wow. My break went super-duper fast. Gone in the blink of an eye. I needed it badly. Truth be told, my expectations surrounding my back injury have really sent me straight through the ringer, and right back again. Back in January, I thought I'd be running by April. The timeline has not gone that smoothly in reality, and I'm in a bit of a holding pattern. I have no news to share on that front, and that's the problem. Right now, it feels like there is no light at the end of the tunnel, and that's been a hard thing to accept.

Lamb Ragù

-with Orecchiette and Sautéed Garlic Broccoli Rabe


Oh, you guys are going to love me. Actually, let me rephrase that- if you have some ground lamb on hand or can find some at the store, you are going to love me. 

This sauce hits it out of the park! It's savory. It's spicy. It doesn't taste like my usual pasta sauce, thanks to ingredients seldom used such as lamb, coriander, and mint. I always, always, always think that I hate mint in savory foods. I think that's because mint has always tasted overpowering to me. I remember one year when the hubby and I were in Cincinnati visiting his cousin and his wife, and I ordered lamb chops with mint jelly at a fancy steakhouse. The lamb chops? Amazing and to-die-for. The mint jelly? It tasted like toothpaste on top of my lamb. Sick. Have no fear friends, there's not enough mint in this recipe to evoke any images of a masked man sticking sharp tools into your uncomfortably stretched mouth while simultaneously trying to engage you in conversation.

Baked Parmesan Truffle Potato Wedges


Welp, it's happened.

I was afraid when I got my new lens that I wouldn't want to post my recipes that I'd already prepared to present. I opened the blog yesterday morning, to pick out a recipe to write about. I sat there mulling, hemming, and hawing through almost an entire cup of coffee. Indeed, I was shocked to reach over at one point only to find an empty mug sitting at my side. So I made a decision that I sometimes tend to make on Monday's: Do it tomorrow. 

And now it's tomorrow. Sigh. I gnashed and ground my teeth over what I had, and finally concluded on Baked Parmesan Truffle Potato Wedges. You know, cause it's hard to go wrong with fries, right?

November In A Nutshell: 2015


November is nearly gone. Unbelievable. This year has flown by. I'm sitting here in a bit of shock that the hubby and I are going to be putting away all my fall decor to make room for our Christmas stuff today. I feel like it was just yesterday that we were putting up last year's tree. I guess time flies when you're having fun, huh? 

The other night I found myself reading my old blog posts. Like, really, really old blog posts. Besides feeling a little sheepish at the quality of what I used to post, I found a blog theme that was left along the wayside at some point. And that theme was the end-of-month wrap-up. I found, for my memory purposes, that those monthly wrap-up's were some of my favorite posts to read. The hubby told me those were some of his favorites too. So, I think it's time to reinstate that tradition. Here's what the hubby and I got into this month:

Oh! And that top photo I took when the hubby and I took the nephews and niece to Buffalo Wild Wings on Black Friday. We had a grand time. The boys' expressions are priceless, aren't they? Haha.

Pumpkin Spice Oreo Cookies


Please forgive me. I'm all about the cookie lately. There's something about fall that makes me want to break out the pumpkin, the cinnamon, the spicy spices that make Spice Cake magical... so when I saw Pumpkin Spice Oreo's at the grocery store, I jumped. I grabbed 2 packages to put in the cart as the hubby rolled his eyes.

"More truffles?" He said, eyeing the cream cheese that was also in the cart.

"No," I said, nose in air. "I'll make something else."

In my head, I racked my brain. I had been planning on truffles. Now what?

Bean and Rice Burrito Bowls


Y'all know I love Mexican. You should also know that burrito bowls are one of my favorite things ever. Ever. I love tortillas, so I love my burritos, but let's face it. A bowl full of the good stuff you usually cram inside the burrito can feel so much healthier than chowing down on a burrito-sized tortilla.  And, if you like lettuce in your burrito (call me Rabbit, cuz' I sure do!), it's almost like having a salad. Only the dressing is a combination of guacamole, salsa, and creamy beans which intertwine into the best possible partnership. Break out your tortilla chips, peeps, and let's talk burrito bowls!

Apple Pie Cookies


It's 5 am.

I'm up early, because the rest of the day is kind of busy. Yesterday, a girlfriend asked if I wanted to meet at the local Mexican restaurant for margaritas and lunch. Not the kind of girl to turn down tequila, I said hell yeah! Which means the hubby and I need to get out of the house and to the gym early today. 

So, yeah, it's 5 am on Friday, one of my bigger post days, and I'm just staring at multiple recipe posts I've got finished and ready to go. I can't pick one. I can't even think of what I'm going to write. One of those kind of days.

Chicken Guacamole Taquitos


I have a confession:

I've been hitting the guacamole hard this summer. Hard. It's been a serious craving for a good 2 months, and a couple times a week I find myself picking up yet another 2 avocados. 2 avocados makes a perfect amount of guacamole for me to eat in about 3 days (I know I've uttered that sentence before!). I've been snacking on the guac with tortilla chips, stuffing it into burritos, and baking it into these tasty little taquitos.

Kentucky Hot Browns


If you want me to be completely honest with you, I will. I'd never heard of Kentucky Hot Browns until I moved to Kentucky. Seriously. I'd lived here a year and a half before I even heard the term. I was perusing FaceBook when I saw an article about The Brown Hotel, birthplace of the Kentucky Hot Brown. The story is, in the 1920's, upper class citizens used to come to The Brown Hotel to dance until the wee hours of the morning. After dancing away the night, they would make their bleary way to the kitchen where they would request a breakfast-y type dish. Wanting to serve his patrons something more upper-crust then eggs and bacon, the chef at The Brown Hotel devised an open-face turkey sandwich slathered in Mornay (that's CHEESE!) sauce. The Kentucky Hot Brown was born.

Citrusy Cantaloupe Cocktails


True fact: It's Friday.

True fact: It may or may not be 5 o'clock somewhere.

Actually, it probably is 5 o'clock somewhere. I'm not sure where, but it probably is. And if you are there, I recommend whipping up a batch of these frosty bad boys. Stat. Tart lemon and sweetly delicious cantaloupe juice mixed with vodka. They are so good.

Raspberry Jam Pops


I'm running out of summer time to post my summer fruit recipes, so today (much like many, many days this summer, ahem) is about raspberries. Lemonades, truffles, jams, smoothies- I've featured them all in raspberry this summer. What can I say? This is my life. And my life includes truckloads of raspberries. Seriously, open my fridge during the summer and what do you think you will find? Cartons of raspberries. 

I'm an addict. I'm not happy until my fingers are stained red and I've got seeds stuck between my teeth.

Recently, I've been watching "Friends" on Netflix. As in, going through the entire series from start to finish. Comfort bingeing, if you will. Anyhoo, I got the fantastic idea to create recipes from the show. Like Salmon en Croute, which Monica makes for Rachel to serve Joshua. Or Phoebe's Chocolate Chip Cookies. Granted, Phoebe's Chocolate Chip Cookies are Nestle's Tollhouse's, so I'll have to do some playing around there. But first, Monica's Kiwi Lime Pie-

Time for a revamp on a classic recipe!

I'm pretty sure it's a requirement as a cook/chef to have your very own recipe for Chicken, Broccoli, and Rice Casserole. It's a classic for a reason. Those flavors that always seem to gel perfectly together. Crunchy, crisp broccoli. Creamy rice. Savory chicken. All married together with cheesy, savory sauce. Ooh child, it doesn't get much better than this.

My 2015 Goals

It's time to talk change. Self-improvement. Growth. You know, all that stuff that we humans loathe to do. I, myself, am a highly self-motivated person. When I set a goal, I work hard to get there. As such, I thought before I laid out my 2015 goals that we would see how I did on last year's goals.

My first goal was to run a 10k. Accomplished! I ran my first 10k in August. It was extremely hilly and my time wasn't the best, but I did it.

2014: By The Numbers

Good morning friends!

I know I said I wouldn't be blogging much this week due to being out of town, but...

Thanks to insomnia, I'm the only one up and I have a feeling it's going to be that way for awhile. I've got a delicious cup of coffee, a gorgeous view over the top of the laptop of Lake of Egypt in Illinois, and I'm wide awake. Therefore, time to blog! I've got a couple of fun, year-end posts to share to wrap up 2014. I actually started this post in January of 2014, to keep track of all the events that took place this year, and right now I'm putting the finishing touches on it. Just for y'all :)
