Wrapping Up November: 2016


How is it December??

This year has simultaneously dragged on, and in the same inexplicable breath, flew by. Where did 2016 go? November was a pretty busy month for us, as it is for most with the Thanksgiving holiday. December is set to fly by too, as the hubby and I are leaving for Oregon in 15 short days!! I'm so excited, I haven't spent a Christmas in Oregon since Christmas 2009. It's definitely time to head home for a holiday!

Turkey Bacon Avocado Paninis


It has been one of those kind of weeks.

Last Monday, a familiar but most unwelcome acquaintance set up shop in my house- the common cold. And ugh, it has been anything but fun. I've been running the gambit from sore throat to fever to head fog to a lost voice. Truly, by the end of the day Saturday, the hubby and I were communicating by text. I'm normally a very quiet person, but found the sensation of not being able to talk very unpleasant. Not cool when you are trying to watch Oregon football! 😡 Luckily, I'm on the mend. My voice is back and with only a nasty cough left, I'm pretty much over the hump.

Good thing too, because I'm doing the Thanksgiving shopping today 🙀

Buttermilk Brined Turkey Tenderloin Dinner


Are you having a small(ish) Thanksgiving this year? Or people over who claim "I just don't like turkey!"? What about guests that will only eat white meat? Or picky children who refuse their plate if a piece of dark meat touched something on it? If you answered "yes" to any of the preceding questions, turkey tenderloins might be for you! Turkey tenderloin is soooooo moist and flavorful, and you won't have near the leftovers you would cooking a whole turkey. Plus, everybody loves that breast meat, right? You might even win over that person who doesn't like turkey! 😁

Calling all "Friends" fans! I've taken on Monica's Thanksgiving Leftover Sandwich, complete with a moist-maker! For those of you not in the know, a moist-maker is an extra piece of gravy-soaked bread in the middle of the sandwich. I know all kinds of people hate the word moist, but I'm sorry. It's word that must be used, and used often, by foodies. You don't want your chicken to be dry, you want it to be... moist. Same with cake. And brownies. And steak. And all kinds of meats. So peeps, I apologize, but the word must be used.

November In A Nutshell: 2015


November is nearly gone. Unbelievable. This year has flown by. I'm sitting here in a bit of shock that the hubby and I are going to be putting away all my fall decor to make room for our Christmas stuff today. I feel like it was just yesterday that we were putting up last year's tree. I guess time flies when you're having fun, huh? 

The other night I found myself reading my old blog posts. Like, really, really old blog posts. Besides feeling a little sheepish at the quality of what I used to post, I found a blog theme that was left along the wayside at some point. And that theme was the end-of-month wrap-up. I found, for my memory purposes, that those monthly wrap-up's were some of my favorite posts to read. The hubby told me those were some of his favorites too. So, I think it's time to reinstate that tradition. Here's what the hubby and I got into this month:

Oh! And that top photo I took when the hubby and I took the nephews and niece to Buffalo Wild Wings on Black Friday. We had a grand time. The boys' expressions are priceless, aren't they? Haha.

Pomegranate Pistachio Bark


Happy day after Thanksgiving!

Did everyone have a great holiday? Eat a lot of turkey? Watch a lot of football? Drink a lot of mimosa's and chow down on Mom's Family Famous Clam Dip? Just me? Ok :-)

We had a great holiday around here! Everyone pitched in to bring different dishes, so my stress level was low. The turkey cooked in 3 hours and 15 minutes, instead of the 5 hours we planned on (one of my fears was that the bird wouldn't cook in time, or that people would eat raw turkey). We were pleased with that one. The Pecan Pie turned out just like the one I practiced on. Twas' a good day.

I'm here posting again on Tuesday (after I posted on Monday) because I don't think I'm going to be back to the blog until Friday. The hubby and I have a super-busy week.

Isn't it always like that around the holidays?

As I mentioned previously (actually, quite a while ago), the hubby and I are hosting Thanksgiving this year. Which means a lot more work than usual. Haha. Usually we are just grabbing a couple of things and heading out the hubby's sister's house. Not this year. So, the hubby and I will be cleaning house today, with tomorrow being a prep day for the holiday. We also have to babysit our niece and our nephews tomorrow before doing the prep work, which will add a extra kick of pressure tomorrow.  I figure, as long as the turkey is defrosted, the Clam Dip is made, and the Pecan Pie is done, I should feel ready for the holiday.

Should being the key word there :-)

Pecan Pie is a serious favorite around these Southern parts. People around here, and especially the hubby's family, love anything pecan pie. Anything pecan, really. Pecan Pie Cake? Yes, ma'am. Pecan Pie Shortbread Cookies? Oh, yes. Pecan Pie Milkshakes? Bring it on. So needless to say, I've been working on perfecting my classic pecan pie.

General Tso's Chicken



Happy Day-After Thanksgiving!

Did you all have a great holiday? Eat lots of turkey? Watch lots of football? Spend a lot of time with family? Our family accomplished all of the above. There was a ton of food. No one went away from our dinner hungry, I'm 100% certain of that. 

The hubby and I have more family time on tap today, and in fact, another dinner tonight. Thanksgiving food is some of my favorite, so no complaints here! It's one of the only times every year I get to eat stuffing. I almost could be satisfied on Thanksgiving just having a giant bowl of mashed potatoes, stuffing, and gravy. Almost. Because there's always turkey, rolls, spaghetti salad, and pies galore to eat. Not to mention deviled eggs, stuffed mushrooms, and chips with dip. Yes, Thanksgiving is grand. 

With all that said, you might be tired of the "extravaganza" that food bloggers turn Thanksgiving into. If so, this recipe is for you!


When I saw this recipe over at Rasa Malaysia, I knew I had to try it. It'd been awhile since I'd made Chinese food, I was needing a fix. Plus, that picture she took! It makes the dish look drool-worthy. I had to have it. 


And have it, we did. This recipe is a winner, times a million! The chicken is perfectly crunchy and delicious when coated with such a savory, glazed sauce. I had to make a couple of substitutions due to availability of ingredients (I really did run all over town looking for dried chiles!), but everything worked out really well. Because I couldn't find dried chiles, I substituted red chile paste, and I don't think the dish was lacking in any heat from doing that. My rice wine is a combination of rice vinegar and dry white wine. You would think sake wouldn't be such a speciality item. 

I take that back. Here's what happened with the sake, and pretty much anytime I need to buy alcohol. The hubby and I live in a dry county. Say what?? It's not 1920! I bet a lot of you thought those didn't even exist anymore, I know I didn't before I came back here to visit for the first time. Luckily, Portsmouth, OH is wet and we are a 15 minute drive from there. But what if I don't feel like going into Portsmouth and I need some sort of alcohol? All of the other shopping centers near me don't sell any kind of alcohol. I'm serious! You can't even find red wine vinegar (yes, apparently an alcohol item!) at some of these stores. Another rule you have to deal with? You can't buy any hard alcohol or wine on Sundays, and I'm not just talking about the liquor store. I almost threw a hissy fit one Sunday three years ago when a cashier wouldn't let me buy cooking sherry. So, with conditions like these, I guess it shouldn't surprise me that no around here carries sake and that I was unable to find any after a complete tour of my surrounding counties. 

Have no fear, a combination of rice vinegar and white wine worked fabulously!

Ingredients (serves 4):

Chicken-
2 tbsp soy sauce
1 tbsp dry white wine
1 tbsp rice vinegar
2 boneless, skinless chicken breasts, cut into thin strips
1/3 cup cornstarch
1/2 cup canola oil

Sauce-
3 tbsp soy sauce
2 1/2 tbsp sugar
1 1/2 tbsp dry white wine
1 1/2 tbsp rice vinegar
1 tsp hoisin sauce
1/4 cup water
1 tsp cornstarch
1 tbsp canola oil
1-2 tbsp red chile paste
3 slices of fresh ginger, minced
2 garlic cloves
1 bunch scallions, cut into 1-inch pieces

hot cooked rice

Directions:

1. Make the chicken- In a small bowl, combine soy sauce through rice vinegar. Whisk to mix. Add chicken to bowl. Allow to marinate for 15 minutes. Heat oil over medium-high heat. Remove chicken from marinade, and completely coat with cornstarch. Fry chicken in hot oil until browned and crispy. Remove from oil with a slotted spoon, and place on paper towel covered plate to drain. Set aside. 
2. Make the sauce- Combine soy sauce through cornstarch in a small bowl. Whisk to throughly combine. Heat oil over medium-high heat in a large skillet. When hot, add chile paste. Sauté for 30 seconds to 1 minute, or until fragrant. Add ginger, garlic, and scallions, and sauté for another minute. Add the soy sauce mixture to the skillet, and cook until thick (about 2-3 minutes). Add chicken to pan, and toss to coat.
3. Place hot rice in a bowl, and top with chicken mixture. Serve immediately!

Pumpkin Milkshake for 1



Happy Thanksgiving Eve!

While we are on the cusp of one of my most favorite holidays, I've got a simple, easy, and proportional treat. It's the perfect dessert for 1 person, and best of all, you can use any leftover pumpkin puree you have remaining from making pumpkin pies. I had about 3/4 cup of leftover pumpkin puree, and it ended up being the perfect amount for this milkshake. There's really nothing to this recipe, only 4 ingredients. Pumpkin puree, vanilla ice cream, a tiny amount of pumpkin pie ice, and because I'm a kid at heart, some chocolate sprinkles. 


In fact, because I was just making this for me, I didn't even bother to unearth the blender. I used my smoothie cup and my immersion blender. Perfect for a small amount of liquid and what felt like less cleaning. 



It occurred to me, as I'm sitting here typing, that I could have a blog specifically dedicated to desserts for one. Honestly, most of the desserts I make are desserts for one. The hubby and I aren't exactly dessert people, and I'm almost always more or less focused on what I'm making for dinner. But, later in the evening, I usually am rooting around the kitchen, looking for something sweet. I end up making cookies in mugs in the microwave, mini-cakes to inhale, or something cold and frosty, like milkshakes. In the case of this milkshake, my eyes passed over that container containing a smidge of leftover pumpkin. That was all she wrote. 


Can I tell you how much I'm loving pumpkin this fall? Well, it's a lot. A lot, a lot, a lot. Y'all are going to have to put up with pumpkin recipes well into December. I made Turkey Pumpkin Chili the other night, and it was so good. When I think of pumpkin, I always think of pumpkin pie. Or pumpkin spice lattes. Or this milkshake. Whatever the case, when I think pumpkin, I think of that spicy, sweet flavor. But that's only because we all love to add sugar to pumpkin. My chili had 2 cups of pumpkin puree in it, and let me tell you, it tasted nothing like pumpkin spice! :)

Trust me, when it comes to chili, that's a good thing!


As I mentioned at the beginning of my post, it's the day before Thanksgiving! I, unfortunately, have to pick up a few things at the grocery store. Argh. Not looking forward to that. After I brave the crowds, with their turkey-hazed, wild-eyed craziness, you can bet I'm not leaving the house. I have a Pecan Pie to bake today and Deviled Eggs to make. I've actually never made Deviled Eggs before, so something new for me. I'm a tad nervous about the Pecan Pie, pies are so temperamental. I did pick up a clear pie pan, so there's no chance I'm going to an under-baked crust :) Now all I have to worry about it is making sure the filling is not "soupy". It is supposed to be somewhat overcast today. Which makes me a little nervous of that old wives tale saying you should never bake Pecan Pie on an overcast day. Cross your fingers for me!

Ingredients (makes 1 milkshake):

3/4 cup pumpkin puree
2 small scoops vanilla ice cream
1/2 tsp pumpkin pie spice
optional: chocolate sprinkles

Directions:

1. Combine pumpkin, ice cream, and pumpkin pie spice in a blender. Blend until smooth. Pour into a glass and top with chocolate sprinkles, if using. Serve immediately!

Holiday Tidings


This is going to be more of a catch-up post than anything else.

I'm having a hard time getting back in the groove post-vacay. Traveling right up till the Thanksgiving holiday made our return home a bit challenging. As soon as we got back in to town, before we had had a chance to decompress, it was Thanksgiving. So on top of taking care of everything we needed to (due to us being gone for a month) we also had family obligations. Things have calmed down this week, it's starting to feel more like the holiday season.

I just love the holidays. While I don't appreciate the Christmas retail season, I do appreciate the Christmas season. The spirit of Christmas, if you will. I love having my tree up, I couldn't wait to get a poinsettia, and I'm most excited to pick up a few Christmas decorations at Hobby Lobby tomorrow. The hubby and I are also having our third Thanksgiving dinner tomorrow, with his sister's family. I happen to love Thanksgiving food, so I'm perfectly fine with third round of Thanksgiving goodies.

The thing that really feels like the holiday season around here? The weather! It has been unseasonably cold and rainy here. Well, I say unseasonably, but really this is only my 4th winter in Kentucky. It could also be that I'm noticing the weather more this year because I started running. I can tell I'm going to have get creative with my workouts for this month, and maybe January as well. I completed my first indoor workout in 3 months today, thanks to Winter Storm Cleon. Strength training is important, and I have been neglecting that. It was a tough workout with some reluctant muscles. I can see how obsessed with running I've been! If I get desperate enough (i.e. the weather gets bad enough), I may even do the gym thing for a couple of months. That's a last resort, I hate gyms. With a passion.

Lastly, I was going to make muffins today. After an hour and a half of lazy yoga, a shower, lunch, a mani and a pedi- I'm not really feeling like baking. Curling up with my current read, Apart From The Crowd, sounds more in order. Or maybe Friends :)

Who am I kidding? Friends is already on.

Muffins may or may not follow this weekend. The hubby and I are running in a Jingle Bell 5k on Saturday, so baking might not happen then either. We'll see. I hope everyone's having a fantastic week, because it's almost over!

Oregon Trip 2013 Conclusion

Welp, I think I've taken a long enough vacation from the blog. The hubby and I flew home from Oregon on Monday, and I'm just now having the time to sit down and write. It's been a crazy week. We got home around 1:30 am on Monday night/Tuesday morning. Needless to say, we slept for most of Tuesday. The hubby returned to work on Wednesday, while I was forced, forced I tell you, to run to the grocery store. *Groan* While grocery shopping the day before Thanksgiving may sound slightly less pleasurable then enjoying a colonoscopy, I was happily surprised to find a nearly empty store. Upon checkout, standing in front of the cashier, I inquired about the scarcity of crazed Thanksgiving shoppers. I was informed that Tuesday and Tuesday night at the store had been absolute nightmares, because people were afraid of getting snowed in. Worked out well for me!

Yesterday was Thanksgiving (obviously), which was spent with the hubby's family. All of this rambling brings me to my point- today is the first day I've had to sit down and play catch-up with social media. Along the lines of catch-up, here are a few pictures to sum up the monthlong vacation extravaganza-

My mom and I have started a tradition since I've moved away. We always go out for drinks at The Vault at least once while I'm in town. This year, I had a Raspberry Lemon Drop made with fresh raspberry puree. It was all kinds of delicious.

Rhoadesgiving! Since the hubby and I flew out a few days before Thanksgiving, my family celebrated Thanksgiving last Saturday. Lots of wine, lots of food, and lots of football! It would have been a perfect day, if only the Duck's could have won!

I'm really excited about this jarred adobo sauce. Sometimes recipes only call for a little bit of adobo sauce, which makes it a pain to open an entire can of chipotle peppers in adobo sauce for just a teaspoon of the adobo sauce. 

I would never be able to buy this -ground shrimp- in Kentucky. I smell a latin-inspired soup on the horizon.

So, we are home now. The blog should be returning to normal. I have to admit, I'm excited to get back to cooking and baking. It's nice to have a break once in a while, but when it comes down to it, I just love being in the kitchen.

I'm Back! With A Construction Update!

I'm back in Kentucky!

Well, technically, I've been back for 2 weeks now. But I am back on the Internet. After 2 weeks of being at the hubby's mother's house without Internet, we decided we couldn't handle it. I'm not sure how people ever lived without the Internet in the past. I'm joking, of course, but the hubby and I seriously couldn't handle it! The hubby pulled some strings, and ended up getting getting his mother free phone and Internet service for 2 months. This worked out well for our short stay here.

So, what happened on the house while we were out in Oregon? Surprisingly little. Yes, we were wildly disappointed that the only thing completed on our house the month we were gone was sheetrock and mud. The amount of productivity for a month's worth of time was shockingly little. Let's just say that if I was in charge of this project, everyone involved would be fired. But I'm not, so I digress.

Oh, and we also got the garage door put on while we were gone.


As soon as we got back and the hubby gave them a good butt-chewing, they decided to paint. He also called the people who were supposed to put the septic in a month ago, and got them to come out and do their job. The septic went in last Tuesday, and took all of our savings with it. Sheesh.

It was getting late in the day when I took these pictures, so pictures with better lighting will be sure to follow. It's hard to see in the photo, but the wall with the french doors is red and the wall in the living room is a darker taupe.

So here is the schedule the builder gave us, which we always, always take with a grain of salt.

Trim, cabinets, and lighting fixtures have all been delivered to the house. Trim (which includes all the interior doors) is scheduled to be installed on Monday. Cabinets are scheduled to be installed on Tuesday. The painters are also supposed to come back and do the final coat of paint on the walls on Tuesday. The electrician is supposed to be out there sometime Monday-Wednesday to put it in the light fixtures. Hard surfaces (countertops and vinyl) are scheduled for Thursday. The plumber should be there sometime after the hard surfaces go in to do the final plumb. Carpet will be the last item completed.

The hubby thinks we will be in the house the week after Thanksgiving.

I remain skeptical.
