May 2017- So far!


Ugh, what am I? The worst blogger in the world? Probably 😂

I admit, my posts have been more sporadic than even I intended. I'm just so in the zone working on my fiction piece. I keep thinking I've got it finished, and as I go to do my final read, I usually decide I want to add more and write furiously until I think I've finished again. At this point, the cycle repeats itself. It's quite the process, trying to write a book. I've been doing research online to see how many words adult novels are supposed to be and I've found quite the wide range of answers. I've read 55,000 words would be considered adult fiction while other sites state that's way too short. Some say 110,000 words is the maximum amount of words a novel should be, but then I discovered some of my most favorite novels are way longer than that so-called ceiling. 'Gone Girl'? 145,700 words. 'Big Little Lies'? 142,600 words. 'The Martian' hits 124,000 and 'The Da Vinci Code' comes in at 138,000. I think my new goal is 90,000. I vacillate daily from thinking I'm utterly crazy and destined to fail, to believing I can do this while pumping one fist in the air. So, to quote what has become my official party line, I apologize for the lack of recipes and posts. I've barely been cooking while in the zone, let alone working on any photography.

Homemade Oreos


Today is my little brother's birthday (Happy Birthday Bro!), so I thought it fitting to post the cookie that he chose for his birthday treat this year. Technically, he chose "dipped Oreos" but one first needs Oreos in order to dip. He did mention that the Oreo's didn't have to be homemade, he just wanted different flavors of dipped cookies. The hubby said asking me to send commercial Oreo's was like asking Gordon Ramsey to send a Big Mac. I snorted in derision and told him I was probably more like Guy Fieri sending take-out from a diner, drive-in, or dive he visited. In the end, I opted to make the Oreo's before dipping them.

Jalapeño Popper Pizza


It's Friday and we're going to talk about pizza. As such, I hereby open with this quote,

"You can't have Thanksgiving without turkey! That's like Fourth of July with no apple pie, or Friday with no two pizzas!"

I bet you can guess what show that quote is from... 

If you guessed 'Friends', you guessed right 😜 What can I say? I was picking up the house this morning, doing my normal chores, making the bed, and thinking about what I was going to write today. I started thinking about pizza... and that it's Friday... and the quote just popped into my head. Quotes from 'Friends' strike my mind every day in almost any situation, and while we won't be having 2 pizzas this Friday, the quote still made me smile.

Wrapping Up December: 2016


Ok, so I know it's 4 days into the New Year but......

December was way too busy and waaaaay too much fun to not wrap up 😁 This post is long and picture-heavy, and I have so much to discuss that I'm not even going to waste time on an introduction. Let's go!

That first picture is the garden on December 1st. The marigolds had finally had it, and so had pretty much everything else. I've still got some rosemary and some thyme alive, but that's it. The cold weather we had in Kentucky while the hubby and I were in Oregon even got my parsley. Darn it.

2016: By The Numbers

Well, well, well. Here it is the first day of 2017 and I'm going to wrap-up the year of 2016 before I even wrap up the month of December 2016. Why? Because I want to. Because I'm a rebel. But mostly because, as per usual this year, I'm running behind. The story of my life 😄

Now that the holidays are almost over and the hubby and I are tucked back into our own house again, it's time to make it a better year. I mean, there's no election this year so we already know it's got to be a superior year, right? 😉 Right. I'm going to save my New Year's goals (and 2016's learning experiences) for another day, and simply talk numbers. Here's 2016 by the numbers-

Yes, rest assured friends, this veggie medley is amazing. I've been eating it for 3 weeks straight. I literally can't stop. I don't want to stop. Sweet potatoes have been discovered and there's no putting that love back in the box.

• Awakened at 7 am by the hubby getting home from his night shift.

• Kissing the hubby hello and wishing him a Happy Birthday!

• Packing a bag to stay the weekend in Marion, IL.

• Picking up the house, and telling my mother-in-law the dogs' routine as we prepared to leave.

• Taking this mesmerizing cheesecake out of the fridge and putting it in a travel container.

• Beginning the 427 mile trek to Illinois.

Untraditional Green Bean Casserole


Look at me! Making my goal of posting twice in one week! Woot woot 😁

Really, I figured I better post this one since I had so much interest from the September Wrap-Up. The people want this recipe. The people clamor for it. And so, I shall share it-

This recipe takes me back to childhood. While I was growing up, I thought this was Green Bean Casserole. I had no idea that traditional Green Bean Casserole was a concoction of cream-of-something soup and crunchy onion straws. The moment I found out was when I spent Thanksgiving with a friend when I was about 17. I had heard that they were having Green Bean Casserole with Thanksgiving, and I was excited. Puzzled, as I wasn't sure why anyone would serve Green Bean Casserole on Thanksgiving, but nevertheless, excited.

25 Cake & Cupcake Recipes


Oh, Saturday morning. How I love thee. I woke up rather lazily today, with one well-behaved chihuahua at my side and a not-so-well-behaved one deciding to sit on my chest and lick my face. Face Licker had decided it was time to get up. Face Licker being Mariota, that is 😂 

I shuffled my way to the Keurig and made a cup of coffee, admiring the view out the window whilst the coffee brewed. It rained last night, which makes me happy. That saves an hour of yard work. I also noted the bird feeders were quite full. It never fails that there is lull in bird activity every summer. The hawks have been staking out the yard fairly aggressively which every year has meant the birds leave for a little while. They'll be back. But that was another chore that didn't need to be done. 

It was a great morning. All I had to do was fill the bee waterers with fresh water and pick some strawberries. I honestly thought the strawberries would be spent by now, but they are really showing no signs of stopping. I'm thinking I'm going to be picking fresh berries every day until the first frost. Which, of course, is fine by me.

Holy moly. One post last week? I meant to do better you guys. I really did. Can I just say that I feel like I haven't had a moment to breathe since Friday? It's been hectic around these parts. Granted, Friday was spent hanging out with a girlfriend, so that hectic-ness was chosen. I was up at dawn baking cookies on Saturday to take to the hubby's family reunion. Dawn is my normal blogging time, so Saturday was out although I had intended to publish on that day. I figured there was always Sunday.

I'm not kidding. These are famous at the hubby's work. In fact, when their Spring project started at his office, people who'd been there before and had these cookies requested them. People had heard about them. This tickles me to no end!

April, Abbreviated: 2016


It's May, you guys. How is it May? Almost half the year is gone already! On the plus side... it will be summer soon. Outside, the trees all have leaves or are actively growing new ones, the weeds have bloomed, the wasps are out *grumbles*, and we are on the cusp of humidity here in NE Kentucky. Yes, it is currently that short, maybe 2-week period we have here where the weather is warm and sunny, but the humidity is low. Because when the humidity kicks in, whew, it's tough to be outside in the afternoon. The garden is growing by leaps and bounds, to my delight. It also appears our bees have decided to stay. What I can I say? April kicked ass. Let's summarize the whirlwind that was last month-

Today is just one of those days. Yes, it's Spring and we've had a spate of nice weather days. But you know the old saying "April showers bring May flowers?" Today is a day of April showers. It's been gray, rainy, and cloudy since I woke up. Not only do I get a day off from keeping the un-sprouted seeds in the garden moist, but it's the perfect day for a comforting bowl of soup.

Red Velvet Cheesecake Cake


Happy Thursday!

It's been a difficult couple of days for the hubby and I. A stomach virus invaded the house and brought all activity to a grinding halt. The hubby had the worst of it. His started on Tuesday, and he did nothing but get sick until 4 pm that day. He was finally able to keep some Pepto in his system in the evening, and that seemed to help. All day Tuesday, the one and only thought I had was 'Please, please, please! Do not let me get this!' I mean, you know when you are watching your spouse get sick every 30 minutes, literally all day? No one wants to do that themselves. I was feeling the fear.

November In A Nutshell: 2015


November is nearly gone. Unbelievable. This year has flown by. I'm sitting here in a bit of shock that the hubby and I are going to be putting away all my fall decor to make room for our Christmas stuff today. I feel like it was just yesterday that we were putting up last year's tree. I guess time flies when you're having fun, huh? 

The other night I found myself reading my old blog posts. Like, really, really old blog posts. Besides feeling a little sheepish at the quality of what I used to post, I found a blog theme that was left along the wayside at some point. And that theme was the end-of-month wrap-up. I found, for my memory purposes, that those monthly wrap-up's were some of my favorite posts to read. The hubby told me those were some of his favorites too. So, I think it's time to reinstate that tradition. Here's what the hubby and I got into this month:

Oh! And that top photo I took when the hubby and I took the nephews and niece to Buffalo Wild Wings on Black Friday. We had a grand time. The boys' expressions are priceless, aren't they? Haha.

Creme Brûlée Cake



You knew it was coming. I warned you. 

And now it's here. It was a smashing, delightful success that I must share. Soooooo good.


First, I must admit this is a decidedly untraditional cake. It's light, moist, creamy, and dreamy. It is the opposite of rich. Which is just crazy, because I was afraid the cake was going to be insanely rich. Not so. The cake is just perfect, airy but moist. The pastry cream is also surprisingly light. Together, they make a delicious combination. This is a very un-Southern cake, meaning when the hubby's Southern relatives tell me this cake would go excellent with coffee, I know it's a low-sugar cake.

Creamy Tomato Pasta with Smoked Salmon


You might be asking yourself, "What is up with all the smoked salmon??" Well,  the answer to that is I can get very good smoked salmon around here. I can get fairly decent frozen salmon around here. I say fairly decent, because it's not fresh and to me, frozen salmon always has a different texture. A drier texture. I grew up on fresh salmon, and therefore am used to succulent, moist, delicious salmon. In Oregon, all it takes is a trip to Costco. Even though we lived about an hour from the coast, the grocery stores around us always had fresh fare.  Fresh fish is one of the things I miss most about Oregon. We tried a fresh salmon from our local big box store one time, and it was gross.  So, I stick to frozen fish and smoked salmon. Such is life.

Frozen Blueberry Popsicles, 3 ways


Popsicles?

Yes, you read that right. I'm posting popsicles today. In October. 

Summer may be long gone, but you know what? I don't care! I love popsicles. I really do. I eat them year round. Homemade popsicles are a great snack and one of my go-to's after dinner. Mine are mostly fruit, unlike those heavily preserved store bought ones that claim they are 0.000001% real fruit. These ones only require a few ingredients, and you can make them all year round by utilizing frozen fruit. Thank goodness for frozen fruit, I don't know how I'd survive all winter without it!

Pumpkin Spice Oreo Cookies


Please forgive me. I'm all about the cookie lately. There's something about fall that makes me want to break out the pumpkin, the cinnamon, the spicy spices that make Spice Cake magical... so when I saw Pumpkin Spice Oreo's at the grocery store, I jumped. I grabbed 2 packages to put in the cart as the hubby rolled his eyes.

"More truffles?" He said, eyeing the cream cheese that was also in the cart.

"No," I said, nose in air. "I'll make something else."

In my head, I racked my brain. I had been planning on truffles. Now what?
