25 Seafood Recipes


Time for a round-up!

I haven't posted a round-up since September, so it's definitely time. And this has to be one of my favorites because seafood? I would eat it at EVERY meal if I could. Seriously! But there's another reason I'm posting a round-up today-

I've spent the last 2 days in the kitchen, up to my ears in potato parts and banging my head against the counter. What's going on? Gnocchi, that's what. I've been trying my hand at homemade gnocchi. You know, those little Italian potato dumplings that are like little clouds of dreaminess? It has not been going well. It turns out there are lots of mistakes to be made while attempting gnocchi. So far, I've had gnocchi that fell apart in the pot, I've had mushy little balls with a texture that can only be compared to snot, and finally, I had a dough that came apart at the seems.

Enchilada Stuffed Poblanos


So... funny story.

I'd always thought poblanos were mild peppers. I'd never cooked them before, I'd just read recipes using them, plus I've had them in Mexican cuisine. I'd just never prepared them myself. Well, a couple of weeks ago, with the hubby gone on a business trip, I decided to stuff a bunch of peppers for quick, easy dinners while he was gone. While I normally stuff regular bell peppers, this time I opted for poblanos. I've been trying to grow poblanos all season, but my plant never fruited. It blossomed plenty, but no luck. Darn it all. My father-in-law's did though, so we received peppers from him throughout the season. It was just a lousy season for any kind of pepper at my homestead.

Arancini with Homemade Marinara


I have opened my blog several times since Sunday, with the intention to write a recipe. Each time, I sat there, staring at the screen, searching for the words that will not come. Everything I started to write didn't sound appropriate. It felt... meaningless. 

On Monday, I was reading the latest post on one of the blogs I follow, Pinch of Yum. Lindsay practically took the words from my mouth on how she was feeling. Right now, after the worst mass shooting in US history, I feel empty. Why does this keep happening? Everyone and their mother has an opinion. Most of the opinions I don't want to hear. If you can't muster the empathy to feel for the victims, people who were in that building, relatives who've lost someone that meant everything to them... I don't even know what to say to you. Here in my small corner of Kentucky, people are pretty judgmental about the fact that this shooting happened at a gay club. I overheard a lady at the grocery store in front of me in line tell the cashier that at least it was "a bunch of gay people" that died.

3-Cheese Risotto


Friends, I'm currently in a "creation" frenzy. I've been churning out the recipes here at home, night after night. Which has been unusual as of late. The hubby returned home from work the other night and exclaimed, "You made dinner again? Wow!". Ha ha. And the next thing he said? "You must be running out of back-up posts on the blog." 

He hit the nail on the head. Sometimes I go through weeks-long phases where all I want to do is write. Sometimes the phase is creating the recipe and taking pictures, and that's where I am currently. Taking lots and lots of pictures, and wracking my brain for any ol' little thing to write. In truth, I'm trying to create a big backlog because my parents are coming to visit next month! It's going to be a longer visit and I know I won't be doing any work while they are here. 

So, that's where my head is at. Must. Take. More. Pictures!!

25 Side Dishes


Hey hey! We've got a holiday weekend coming up y'all!

The Memorial Day Holiday weekend is upon us. I don't know about you, but ever since we moved to Kentucky, Memorial Day has been spent with the hubby's family. The hubby's cousin and his wife drive in from out of town, and we all gather together for a family barbecue. This time, the hubby's cousin and his wife are bringing their new baby girl for everyone to meet! We are excited. The weekend is promising to be very sunny, right now they are forecasting a high of 90º. Whew! Good thing the hubby's-cousin's-wife's-mother (whose house we party at) has a pool. The pool is the best part of the get-together, at least as far as all the nieces and nephews are concerned :-)

Today is just one of those days. Yes, it's Spring and we've had a spate of nice weather days. But you know the old saying "April showers bring May flowers?" Today is a day of April showers. It's been gray, rainy, and cloudy since I woke up. Not only do I get a day off from keeping the un-sprouted seeds in the garden moist, but it's the perfect day for a comforting bowl of soup.

Chicken Yakitori


It's that time of year again!

The weather is getting warm. Our days have been in 70's and 80's this whole week. Our forecast shows nary a night under 40º. It's those days when the sun is beating down on your shoulders and you have an ice cold beer in your hand that grilling is just... the best.

I mean, who wants to stand over a hot stove when the weather has just begun to break? I don't. The garden is just starting to grow and flowers are in bloom. If I can sit outside in a lawn chair and flip dinner every once in while, oh yeah, I'm gonna do it.

Recipe Redux: Chile Garlic Shrimp


Ah, the shrimp. That tasty little crustacean that usually lives at the bottom of the ocean. 

Shrimp has always been, and will probably always be one of my favorite foods. It was tradition in our family home growing up to have a shrimp ring on special occasions. I can still remember sneaking into the kitchen, gazing into the fridge, grabbing a few of those suckers, and devouring them on the spot. Of course, growing up in Oregon and 60 minutes from the Pacific Ocean, there was way more access to fresh shrimp than here in landlocked Kentucky. I depend on frozen shrimp here, which isn't technically my favorite but I take what I can get. Not to mention that shrimp is expensive, so it's a once-in-a-while treat too.

I take it when I can get it, and I love it.

25 Rice Recipes


Rice. I love rice. It's a simple, affordable, and versatile grain product that's very familiar to most Americans. You can fry it, and come up with fried rice or even pan-fried rice cakes. You can bake it inside stuffed peppers, or casseroles loaded with veggies. You can serve it with a saucy stir fry with the sole intention of using it to soak up that sauce. One of my favorite ways to eat rice? In a bowl with a little soy sauce drizzled over it. Simple. Yet delicious. I credit rice with helping our budget when we first moved to Kentucky. Due to its low price, I added rice to a ton of dishes and served it often in our first years in the bluegrass state. We still eat a lot of it, even though things are much different these days. I wish I could get the hubby to enjoy brown rice, but you can't win all the battles :-)

Spicy Sesame Beef Rice Bowls


What, what? It's January, and I've already posted as many Asian-style recipes this month as I did all of last year? (That would be 2!)

I told you guys I was going to get more Asian dishes on the table, and what do you know? Another for the books! You are going to love these rice bowls. There is soooooo much delicious flavor, and guess what? A ton of veggies! I have to ask myself, what's not to like about these bowls? Crisp red and yellow peppers, tender spinach, flavorful marinated sirloin, plus crunchy wanton strips, sesame seeds, and plenty of dressing?

Recipe Redux: Shrimp & Artichokes Over Rice


Let's go back in time my friends-

To February, 2012. I'd been blogging for a very short time, less than a year. The hubby and I had been living in Kentucky for almost a year and a half, in our run-down rental in Ashland. The hubs had been working a new job for all of 3 months, and we'd begun to house-hunt. The hubby is required to live within 30 miles of the office, so Ashland wasn't cutting it. We'd been house-hunting for months, and finding zilch. Houses that needed to be gutted. Houses at the base of hills, that very obviously needed thousands of dollars of mold abatement. Houses on busy roads. Houses where you could reach out and touch your neighbors house. It was soul-sucking, to say the least.

Spinach & Mushroom Stuffed Peppers


Hello friends! Up on deck today, a vegetarian stuffed pepper. Filled to the brim with marinara sauce, rice, spinach, mushrooms, panko, and of course, cheese! These are a great alternative to the standard stuffed pepper that is usually filled with a meat mixture. Use leftover rice, and you've really got yourself a meal that seems like it would take a long time but actually comes together very fast.

Chicken Fajita Casserole


Chicken Fajitas? In casserole form?

You mean, no screaming hot plate of peppers and chicken to burn my hands on? No constructing-every-portion-as-you-go? And, if you aren't constructing fajitas along the way, does that mean no extraneous plates of toppings lying around that you will eventually have to wash later that night?

If all that hasn't convinced you, how about this? Layers of tortilla, Spanish rice, smoky chicken, and sautéed peppers and onions, all tied together with a super-cheesy queso sauce?

Bean and Rice Burrito Bowls


Y'all know I love Mexican. You should also know that burrito bowls are one of my favorite things ever. Ever. I love tortillas, so I love my burritos, but let's face it. A bowl full of the good stuff you usually cram inside the burrito can feel so much healthier than chowing down on a burrito-sized tortilla.  And, if you like lettuce in your burrito (call me Rabbit, cuz' I sure do!), it's almost like having a salad. Only the dressing is a combination of guacamole, salsa, and creamy beans which intertwine into the best possible partnership. Break out your tortilla chips, peeps, and let's talk burrito bowls!

I usually try to post on Mondays, however, yesterday was a tad cray-cray. I felt like I was going from the moment I woke up. I basically woke up, shotgunned 3 coffees, watered the garden, fed the birds, gathered all the house laundry to start, cleaned out the fridge, ran the dishwasher, headed out to the grocery store, and then the feed store. Came home, mowed the lawn, finished the laundry, took a shower, and...

Collapsed.

Slow Cooker Chicken Mole


It's Cinco de Mayo week!

It's no secret that Mexican food and/or Tex Mex are some of my favorite cuisines. I never strictly wait for Cinco de Mayo to make Mexican food, I make it year round. That being said, it's my own personal tradition to eat Mexican food and drink a margarita on Cinco de Mayo. And I love my traditions. I haven't decided what to make this year, but I'm leaning towards enchiladas. I may have gotten my chili gravy down, but I haven't found my ultimate enchilada sauce yet. Uh oh. Mouth. watering. already.

We are less than 24 hours away from the hubby and I hitting the road to go pick up our little man. To say I'm excited would be an understatement of mammoth proportions. I'm counting down the minutes till it's 8 am here, and I can call the puppy's foster mother to finalize our arrangements. Not that it will help. My brain is all like, "Puppy, puppy, puppy, puppy, puppy... Is it time to leave yet? No? Puppy, puppy, puppy, puppy..."

The NCAA tournament has been going as planned for the hubby, with Kentucky chugging right along. My bracket is looking awfully precarious, though I do have Kentucky winning it all. As long as Kentucky can keep on winning, I'm still in it. But barely, and by the skin of my teeth. I'm in 4th place in the family pool. Out of 5. I guess you can't win em' all.

Top Recipes of 2014

Well peeps, it's almost 2015. Only 2 more days. 2 days that are holidays to me every year. 2 days, you ask? Yes. Today is my birthday (!!!) and tomorrow is, of course, New Year's Eve. I coast right into the new year every year after 2 lively days of celebrating.

Oh my gosh, typing that sentence just brought Adam Sandler's "Hanukkah Song" to mind. "Instead of 1 days of presents, we get 8 CRAZY nights". LOL. Instead of 1 night of celebrating on New Year's Eve, I get 2 crazy nights :)
