Sorghum-Glazed Veggie Medley

-with roasted salmon

It took more than a few tries and a couple of weeks, but I finally got this dish where I want it 😀

Yes, rest assured friends, this veggie medley is amazing. I've been eating it for 3 weeks straight. I literally can't stop. I don't want to stop. Sweet potatoes have been discovered and there's no putting that love back in the box.

Basil For Days (And 3 Pesto Recipes!)

Summer may be winding down, but no one has told my basil that. I don't know about you guys, but I've got it coming out of my ears! If there's one crop in my garden that never fails to produce, it's that large-leafed Italian favorite, basil. I normally plant plenty of it in my herb garden, but this year I went a bit further. I read that it's a great companion plant for tomatoes, keeping hornworms away and infusing the tomatoes with even greater sweetness. And I can confirm, I've had little problem with hornworms this year. In fact, since the basil has exploded and grown, I haven't see a single hornworm. I'll be pairing these two together from here on out!

Toasted Almond & Salted Caramel Bark

Oh yes. It's Friday, and boy do I have a treat for you guys! Because what better day of the week to reward yourself than Friday? And let me tell you, this bark candy is truly a treat. It's super easy and fast to make, crunchy, sweet, and salty. It's only February, but I'm already thinking this will be going in my Christmas Cookie boxes. It's that good.

Kung Pao Chicken Zoodles

I'm joining the zoodle craze.

Sure, February doesn't seem like the right time of year to start, um, zoodling, but it cannot be helped. I was catching up on reading the blogs I follow last month, in the evening and after a couple of glasses of wine. One of my favorite bloggers, Lindsay from Pinch of Yum, featured a recipe using spiralized veggies and that was all she wrote. I've had a spiralizer on my Amazon wishlist for months, but something clicked.  I had to have it. I wanted spiralized bell peppers, and cabbage, and most importantly, zoodles. The wine clearly muddled my thinking, and before I knew it, I'd already clicked "purchase" on Amazon.

Does this happen to anyone else late in the evening when they have a nice wine haze going on? I swear. Luckily, the contraption was only $30. It could have been worse :-)

Plus, the zoodles! Ohhhhhh, the zoodles...

25 Chocolate Recipes

Thanksgiving is upon us, my friends!

It's true, October would have been the perfect month for  25 Chocolate Recipes. That being said, I think November is a great month for this round-up too. For a couple of reasons-

#1. Not everyone likes Pecan Pie. Or Pumpkin Pie. I guarantee there's people out there that might want a chocolate dessert for Thanksgiving.

#2. Christmas and holiday baking are right around the corner. There are plenty of cookies, candies, and cakes in this round-up to choose for cookie swaps or last minute party gifts.

#3. I mean, it's chocolate. Come on. It's good 12 months out of the year. It's good for 52 weeks out of the year. It's good for 365 days out of the year. You get the picture.

So, yeah. Shall we jump right in?

*Warning- pictures may induce drooling, cravings, and a one-track chocolate brain. Proceed at your own risk :-)

Butter Pecan Ice Cream

Some of you may be aware that I used to work at Baskin Robbins. Ice cream capitol of the world. Man, I loved that job. I remember, before I got hired, how excited I was that I might get to work there. A typical 20-year old to be excited about working at Baskin Robbins. What happened was that a lady who went to school with my mom (they were sorority sisters) was married to a Baskin Robbins franchisee. Somehow, there were a lot of Alpha Chi's that worked at that Baskin Robbins. I suspect we had an "in". At any rate, I worked there with 4 other girls from my sorority. We had a grand time.

25 Delicious Cookie Recipes

Time for this month's roundup!

Sure cookies are the hip thing at Christmas, and around Valentine's Day, but if we are going to be really honest, cookies are good all the time. They have been the bane of my existence since I've learned how to bake, the reason those last 3 stubborn pounds hang on.

Deep Dish Butterscotch Pecan Cookie

Question: What better way to celebrate the beginning of your weekend than with a deep dish cookie perfectly proportioned for one?

Answer: There is none.

I'm getting to be somewhat of an expert in single-serving desserts. What can I say? Late at night, when the hubby is away at work, the cravings for cookies start.
