It's Almost Spring!


Actually, I guess it is spring. 

Hello!

I know it's been awhile, but I'm feeling ready to get back in the swing of things. There's something about spring that's just so inspiring for me, I'm starting to burst from wanting to share recipes and photos again. Winter is my least favorite season, it always feels bleak to me. I know there's many wonderful things about winter, and I appreciate them... for awhile. But then I'm ready for renewal. I love when the early daffodils pop, when there's buds on all the trees, when I start seeing juvenile cardinals and gold finches at the feeders again. It's magical. I have a few items in my garden that just pop up all on their own, like little gifts from nature. Such as my chives, above. They just burst from the ground one day, green and beautiful, full of hope.

Canaan 2017


Hello friends! I know it's been awhile and that was definitely not my intention. The hubby and I were staying in West Virginia with his family with no Wi-Fi. Then, as soon as we got home, I got a cold. Drat! As such, I've been feeling foggy, achy, and completely stuffed up. I haven't felt like writing, except to text the hubby to ask him for more soup or another box of Kleenex 🍜🤒

Wrapping Up January: 2017

Seriously. It's February. Of 2017. Unbelievable.

January was (thankfully) not as busy as December you guys. However, it was busier than I expected. Not a lot of time for writing and the blog, but this is also a time period in history unlike anything I've ever seen. I don't know about you, but I'm finding it hard to write. Especially about food. It seems to me that everyone is angry these days. And I do mean everyone. The right and left alike are fired up. I mean, if you read any comments on any political piece, you will see anger. From both sides. I want to write about it, but I am still searching my soul for something to say that's not divisive. 

It seems an impossible task.

Pesto Stuffed Shells


It's the first recipe of 2017! Yipee!

11 days into the new year and I'm finally getting around to posting about what I do best- FOOD! This recipe is a keeper, I'm telling you. Perfect for a frigid winter day full of ice and snow which I know a lot of us are dealing with right now. We only got about 2-3 inches last week and most of it melted on Monday. Today's temperature is supposed to be a lot warmer though (thank goodness!) because it's been a week of temperatures in the teens. Brrr! But I guess our snow is nothing compared to what's been going on in my former home of Oregon. They are getting more snow than I've ever remembered them getting, and we never got much snow when I was growing up. A snow day here or there, but not this much! In my mind, it's the perfect weather for staying in and popping a carb-a-licious casserole into the oven for dinner ☃️

Untraditional Green Bean Casserole


Look at me! Making my goal of posting twice in one week! Woot woot 😁

Really, I figured I better post this one since I had so much interest from the September Wrap-Up. The people want this recipe. The people clamor for it. And so, I shall share it-

This recipe takes me back to childhood. While I was growing up, I thought this was Green Bean Casserole. I had no idea that traditional Green Bean Casserole was a concoction of cream-of-something soup and crunchy onion straws. The moment I found out was when I spent Thanksgiving with a friend when I was about 17. I had heard that they were having Green Bean Casserole with Thanksgiving, and I was excited. Puzzled, as I wasn't sure why anyone would serve Green Bean Casserole on Thanksgiving, but nevertheless, excited.

Chicken Bacon Orzo Soup


Here in Kentucky, winter is about to give what I suspect is its last gasp. I even woke up to a dusting of snow this morning. Judging from the future forecast though it looks like after this next week, the weather will break. No more nights in the 30's with the fear of frost. Days in the high 60's, low 70's. The garden will flourish. Our privacy fence of densely populated trees at the edge of our property (which lose their greenery every winter) will fill out with leaves again. And chicken soup that warms the soul will lose just a smidgen of its appeal.

Vanilla Quick Bread


There is a strategic reason I'm posting this bread today. I'm posting it today because it is, officially, the perfect vehicle for my Blackberry-Nectarine Preserves. The two go hand-in-hand like chips and dip, or bacon and eggs. Although, I must confess, this bread is a great companion for pretty much any fruit spread. I slathered some Raspberry Jam on it, and my taste buds were equally pleased. Perfect for breakfast to serve alongside coffee, or a light dessert if you want to add some pudding and whip cream to the mix. Yummmmmm....

Creamy Chicken, Potato, & Kale Soup


This is truly one of those soups that came about by me throwing stuff in the pot. I'd picked up a rather large rotisserie chicken after getting a steroid shot one day. Because who feels like cooking after that, am I right? It's pretty much routine for me to throw the chicken carcass into the crockpot and make broth out of it the night we have it. So there I was. I had leftover chicken. I had freshly made chicken broth. It also happened to be the day after the Super Bowl, which meant I also had a bunch of potato innards on hand from the Potato Skins the hubby and I had devoured on our holiday. 

Chicken. Chicken broth. Very soft, almost mashed potatoes. What would you do? 

I chose soup!

Recipe Redux: Chocolate Chip Coffee Muffins


This girl is ready for spring!

We've had some weird and wacky weather around here lately. The chihuahuas couldn't be more displeased. Especially Mariota. I've never had a dog that does his business so fast. I mean, even with 4 inches of wet, sloppy snow on the ground, Haloti will follow his nose outside until the iciness of his poor little paws catches up with him. Gizmo keeps wanting to cross the snow field over to our neighbor's house. Those 2 want to smell things all. day. long, even with snow on the ground. But Mariota? His process is more like this: run out the door, hike leg on small trees the hubby and I planted by the front sidewalk, run like hell back to the house. Done. It's amusing.

Boy, my timing on this one is sure off, huh?

Tucked away here in my Northeastern corner of Kentucky, the weather forecasters aren't sure what we are going to get here. Right now, they think the line may be south of the Ohio River. As in, north of the river may only get 2-4 inches. Well, we live basically right on the river as we are about 3-4 miles away. We are either going to get a normal 2-4 inches or we are going to get 2 feet. Personally, I'm hoping it's only a couple of inches. The chihuahuas hate when the snow is taller than them, and I hate waddling through it all to feed the birds out back. At any rate, salad is not the name of the game for this weather.

Slow Cooker Turkey Breast


It's finally starting to feel like March around here. 

We've had a fairly warm last couple of days, which has melted a considerable portion of our snowpack. Enough of the snow, in fact, that the dogs are pretty happy. And it was 60º yesterday! The hubby and I went into town without coats, and it felt amazing.

I'm sure (if you follow the national news) you are aware of the winter weather activity in the Kentucky area. Earlier in the week, the governor declared a state of emergency. In our little northeast nook of the state, we received 16 inches Wednesday and Thursday.

Raspberry Blueberry Smoothies


You could say, "Uh, Jess. You have 16 inches of snow on the ground. Why the heck are you making smoothies??"

And I would say, "Eh."

Yes, it's true. We received a freakin' truckload of snow. I was telling the hubby that I'd never seen so much snow. And I remember uttering that exact statement last year! Around this time last year, I think the most snow we got in one day was 8 inches. We have double that now. It's so crazy.

Guess what friends? I got my car back! Yippee! I'm very excited to have my car back. We picked it up from the evil dealership yesterday morning, and it drove like a champ all the way home. Can't say I'd ever recommend these people, nor will I ever buy a car from them. But the car is retrieved. Hopefully, we can now put this whole ordeal behind us.

Blueberry Breakfast Bars

I'm going on my 3rd day of not leaving the house. We are currently buried under 6-7 inches of snow. The roads are snow-covered and icy, and the hubby hasn't even been driving his car. His car has been parked at his office all week, because thankfully, his boss gave him a huge 4-wheel drive truck to tackle the weather with.

I'm getting to be somewhat of an expert in single-serving desserts. What can I say? Late at night, when the hubby is away at work, the cravings for cookies start.

The Best Raspberry Vinaigrette

plus a salad recipe!


I love a good raspberry vinaigrette. Until recently however, I've been buying it at the store. Eek. Commercial salad dressings top a lot of foodie lists of the worst processed food items you can buy. Full of preservatives, artificial flavors and colors, and dun dun dun, waaaaay too much sugar. Preservatives I can see, but artificial flavors and colors? Look at that gorgeous raspberry color! Why would you need to artificially color that? And I'm pretty sure some commercial raspberry vinaigrettes don't even contain much of real raspberries. Well, I can tell you with ease, there are more than a few real raspberries in this dressing. 


This has to be one of the best raspberry vinaigrette recipes I've tried. And I've tried quite a few recipes. Recipes that had way too much vinegar and very little raspberry. Recipes that had way too much sugar and very little vinegar. Recipes that were bitter. Recipes that were way too sweet. Recipes that were too thin. It wasn't until I came up with this recipe that I was finally satisfied. This isn't your typical vinaigrette. It's thick, creamy, and for lack of a better word, luscious. The texture kind of reminds me of honey mustard. And it works.  It's a very versatile dressing, good for lettuce, spinach, veggies, fruit, meat, nuts, etc. 


One of my favorite salads to put raspberry vinaigrette on is a spinach salad. I've been making this salad (with commercial raspberry vinaigrette) for years. Years upon years. One of my friends brought a version of this salad to "Family Dinner" when the hubby and I were still living in our first apartment in Portland. "Family Dinner" was basically the hubby and I, plus a couple of his co-workers and their significant others getting together to share dinner and episodes of "Nip/Tuck". You know, in "Nip/Tuck"s heyday. We called it "Family Dinner" because one of the couple's family lived in Minnesota and the rest of us, well, our families lived not quite close. Each week, one couple would prepare dinner for the group. The next week, a different couple would prepare the meal. Ah, the early 20's. When friends were your family. Good times. I was introduced to quite a few "new-to-me" foods during that time. One being this salad. Spinach, red apples and red grapes, gorgonzola cheese, and raspberry vinaigrette. Yummy!


After being introduced to this salad, I began to reserve it for special occasions and I usually served it with steak. I remember 2 or 3 Valentine's Day menus that included a New York strip and this lovely salad. These days, I make it more often that once a year. And it goes perfectly with quite a few proteins- chicken breasts, fish fillets such as cod, halibut, tilapia, even salmon, pork tenderloin. You get the idea. This salad makes a great side dish. And don't limit your use of this dressing to this salad. The dressing goes quite well with lots of toppings, as I mentioned before. 

So, it's November 17 and here in NE Kentucky, we run the risk of getting some snow today. I'm not too worried, the temperature has been quite warm around here. It was 43º yesterday and it only got down to 35º last night. We are sitting firmly at 37º right now, so I'm thinking we might miss this first winter storm. I can only hope. I'm not ready for snow because once it starts, we'll probably be dealing with snow here until March. Maybe April, like last year. Ick. Can you tell I'm not a winter person? He he. 

All right, I'm out. The hubby says I need to be home by noon today, because that's when the snow is supposed to start. We went back and forth on this, me saying it should be too warm, him saying the snow could fall hard and fast and then it wouldn't matter if the temperature is too high. I'm not a snow driver though, so I fully plan on being home by noon. So-- off to run my errands :)

Ingredients (yields 2 cups):

3/4 cup frozen raspberries, thawed
1 cup canola oil (I used canola as to avoid the olive oil flavor)
1/4 cup + 1 tbsp white vinegar
1 1/2 tbsp dijon mustard
1 tbsp sugar
1 tsp poppy seeds
3/4 tsp salt
1/4 tsp onion powder

Directions:

1. Combine all ingredients in food processor. Pulse until smooth, about one minute. Store in an airtight container in the fridge for up to 3 weeks.
