Jalapeño Popper Pizza

It's Friday and we're going to talk about pizza. As such, I hereby open with this quote,

"You can't have Thanksgiving without turkey! That's like Fourth of July with no apple pie, or Friday with no two pizzas!"

I bet you can guess what show that quote is from...

If you guessed 'Friends', you guessed right 😜 What can I say? I was picking up the house this morning, doing my normal chores, making the bed, and thinking about what I was going to write today. I started thinking about pizza... and that it's Friday... and the quote just popped into my head. Quotes from 'Friends' strike my mind every day in almost any situation, and while we won't be having 2 pizzas this Friday, the quote still made me smile.

25 Tomato Recipes

Happy Monday!

Wowsers, did this weekend fly by or what? I just can't even, I don't know where it went. I'll start with my doctor's appointment on Friday morning-

So, that appointment... It was first thing in the morning, 8 am. I was the surgeon's first patient of the day. Now, most of the surgeons I've seen, they start by asking me questions and conclude by giving me an exam. And truth be told, the exams are usually quite gentle. Painless. This surgeon started the appointment by giving me an exam. Somehow he managed to locate the exact evil spots on my back. Not only did he locate it/them, but he pressed insanely hard into them.

Naan Pizzas with Chicken, Asparagus, & Egg

Yes. You want this. Right now. For breakfast. For lunch today. For dinner tonight. Eat it for every meal! One bite and you'll be in love :-)

I love flatbread pizza. Does it get any easier? I love homemade pizza dough just as much as the next person, but there's something to be said about a meal that's ready in minutes vs. a meal you had to plan all day. And these pizzas really did take just minutes. I used leftover rotisserie chicken, because, hello, it's me. I seem to always have rotisserie chicken in my fridge. Pair chicken with leftover roasted asparagus from the night before, and pretty much the only work you will have to do will be making a couple of sunny-up eggs.

Greek Pizza

Happy Friday all!

I really did try to blog yesterday, to ensure I got my normal 3-a-week in. However, yesterday was a morning (or rather afternoon) that I got one of those steroid shots in my back. And I'm not allowed to eat or drink anything after midnight before the procedure. That includes coffee

So I sat down to write yesterday and was heartily displeased to see all the existential, angsty sentences that my caffeine challenged-creativity managed to cough up. Whiny, here. Gloom and doom, there. All because Jessica's brain was without it's normal amount of coffee. Eventually, I erased everything I wrote and said, "Tomorrow then!"

Arugula Prosciutto Pizza

What is it about the holidays? There never seems to be enough time. I've been baking, pretty much non-stop, for the past 2 days. And I'm still not done! I guess this means the hubby and I will be mailing the cookies tomorrow morning instead of this morning. I've decided that I have to be ok with this, mainly because I'm not done. I should know better by now, 2 days is just not enough. Do you hear that, Future Jessica? 2 days is NOT enough!

We can only hope I remember that next year.

25 Things You May Not Know About Me: October 2015

Happy Wednesday friends!

I was all set to post a roundup of 25 chocolate recipes. Yummy, right? Then, I had a change of heart. We can get to those chocolate recipes at anytime. I decided to do something fun instead. Everyone likes to get to know the blogger behind the blog. I actually haven't done a post like this since June 28, 2013. I really tried to dig deep this time. So, enjoy! I'll be back with a new recipe on Friday :-)

Grilled Chicken Pesto Pizza

Let me tell you about this pizza. It was an ordeal. This post has been a work in process since, well, ummm, sometime last year. I can never get it to look right. I make it quite regularly, but it's not my prettiest pizza. Last time I made it for pictures, I tried shredded chicken, yellow tomatoes, and fresh mozzarella bocconcini (those little mozzarella balls). It wasn't pretty.

Creamy Pepperoni Dip & Parmesan Dippers

Let's take a break from summer fruit in a big way. Because pepperoni is probably the farthest thing from fruit you can get. Put it in a creamy, cheesy dip to be liberated by crispy, salty pizza-crust dippers and you.will.die.

In the best possible way, of course :)

25 Deliciously Cheesy Recipes

You guys.

We are less than 24 hours away from the hubby and I hitting the road to go pick up our little man. To say I'm excited would be an understatement of mammoth proportions. I'm counting down the minutes till it's 8 am here, and I can call the puppy's foster mother to finalize our arrangements. Not that it will help. My brain is all like, "Puppy, puppy, puppy, puppy, puppy... Is it time to leave yet? No? Puppy, puppy, puppy, puppy..."

25 Easy Chicken Recipes

Happy Friday! Happy March Madness!

The NCAA tournament has been going as planned for the hubby, with Kentucky chugging right along. My bracket is looking awfully precarious, though I do have Kentucky winning it all. As long as Kentucky can keep on winning, I'm still in it. But barely, and by the skin of my teeth. I'm in 4th place in the family pool. Out of 5. I guess you can't win em' all.

25 Super Bowl Snacks, Treats, and Meal Ideas

Good morning, and happy Tuesday!

I meant to publish a post yesterday, but the morning ended up being way too hectic. The hubby and I had to leave the house at 7 am yesterday to drive my car about an hour away to the Nissan dealership. It was not the best day for travel (thank you, East Coast Blizzard!), not to mention the problems I was already having with the drivability of the car.

Chicken Bacon Ranch Pizza

We have one brewery in our little, tiny town. One place that dares to ferment their own beer. The hubby and I are big, big fans. I'll take a draft Pilsner any day over a bottle of any over-produced mainstream lager. It's a good day when we parallel park in front of the 100-year old building, open our car doors, and smell YEAST.  That means beer is being brewed that day. Beer that the hubby and I may be sipping on in a couple of months. This brewery is one of the only non-chain restaurants in a small, dying town filled with Buffalo Wild Wings, various Roadhouse's, and a McDonald's every 2 miles or so. As such, it's one of the only restaurants in town that we frequent. It's our top spot for date night, you can find us there about once a week. While we may go for the beer, we stay for the pizza.

The brewery uses a thin, crispy crust that is to-die-for when they bring it to your table straight out of the pizza oven. It makes a crunch sound if you tear it in half. I love when places uses this type of crust, it's my favorite. They make a specialty pizza called, you guessed it, The Chicken Bacon Ranch. It's the best pizza there, and also, the most expensive. They have it half-price on Tuesdays, so if it's a Tuesday, you know what I be ordering. So, when I had some leftover rotisserie chicken and a few lonely strips of bacon, I decided it was time to make a homemade version.

And the hubby went nuts. He loved the homemade version, and he's not even as crazy about the brewery pizza as I am. I think the homemade crust did him in. I could put anything on homemade pizza crust and he'll go coo-coo for Cocoa Puffs over it.

The pizza sauce is ranch dressing, and I think that's part of the appeal of this pizza. The ranch dressing gives the pizza such a distinct flavor, and pairs perfectly with chicken and bacon. This pizza wouldn't be nearly as special with a plain red sauce. I haven't found my perfect ranch dressing recipe yet (a 2015 goal perhaps?) so I used a combination of sour cream, mayo, and a ranch dressing seasoning packet. The hubby really liked the ranch, but as I mentioned, it's not "The One". At any rate, testing out different ranches sounds like something I'll be doing in the not-too-distant future. You could also use bottled ranch dressing for this pizza, or substitute your favorite recipe.

All right, change of subject time. I only have 2 items on my to-do list today:

1. Early morning doctor's appointment (boo!)
2. Bake Christmas cookies (yay!!!)

As soon as I get home, I plan on putting on a Christmas movie (I think it's going to be "Love Actually" today), getting out my tubs of flour and sugar, and having a grand old time tossing cookie dough around the kitchen.

It sounds heavenly :)

Have a wonderful Wednesday everyone!

Ingredients (makes 1 large pizza):

cornmeal
3 tbsp ranch dressing
1 cup chicken, cooked, diced or shredded
3 slices of bacon, cooked, crumbled
1 1/2 cups mozzarella cheese, shredded
1 tbsp fresh parsley, minced (optional)

Directions:

1. Prepare the pizza dough according to directions.
2. Preheat oven to 550º. Place a baking stone on the top rack. Allow oven to preheat for 1 hour. While oven is preheating, remove dough from fridge and allow to come to room temperature.
3. After oven has preheated for 1 hour, turn oven off and turn "broil" on.
4. Roll your pizza dough out onto a well-floured surface and into a large circle. Remove baking stone from oven (CAREFULLY!) and place on its rack. Sprinkle cornmeal over baking stone. Move large circle of dough onto baking stone. Brush ranch dressing all over the dough. Sprinkle the chicken and bacon evenly over the dough. Evenly sprinkle the cheese over the dough. Place baking stone back in oven, and broil for 5-7 minutes, or until the cheese is melted and the pizza has begun to get browned and toasted in areas. Remove from oven, sprinkle with parsley (if using), slice, and serve immediately.

Pineapple Pulled Pork Pizza

Did you try my Texas Pulled Pork? If so, you can turn this-

Flavorful and tender BBQ pork, made over into pizza!

All you need is some handy-dandy homemade crust, a smattering of toppings, plenty o' cheese and you have yourself an economical and tasty dinner!

I know I wax poetic about home economics quite often. It is a topic near and dear to my heart, as I suspect it is for a lot of people. We may have a tiny household of 2 people, but we also live on one income. It's not like the hubby and I are eager to throw away money. I think discussing ways to save money is interesting to just about everyone, I mean, who doesn't want to keep more of their hard-earned money in their own pockets? I've already told everyone how many meals I get out of pulled pork, and this pizza is just one example. It's super-easy to turn leftover pulled pork into just about anything. Which brings me to another point- small households. If you run a small household, you might feel adverse to cooking such a large amount of meat. A 4 lb roast sounds quite large, doesn't it? The fact of that matter is that you don't find many roasts that are smaller than that. I mean, I usually find the smallest pork shoulders to be around 8 lbs. Don't be afraid of this, small household. Cut that roast in half, and freeze part of it. And make the 4 lb roast! Just have a game-plan for the leftovers. And honestly, wouldn't it be nice to spend one day cooking the protein, and then have it ready to work with for several dinners throughout the week?

Well, I'm not afraid to tell you- It's wonderful!

Here are few other ideas for leftover pulled pork:

Can I tell you how much I heart food bloggers? I think we are some of the nicest and most creative folks on the planet. Not too mention people's photography skills. Wow! Definitely something I strive for every day.

Ok, I think I've demonstrated more than a few methods for leftover pulled pork. If you have a small household, please, don't be afraid. Be very, very excited!

Have a great day everyone!

Ingredients (makes 1 pizza):

cornmeal
1/2 cup BBQ sauce (I used Sweet Baby Ray's)
1 cup fresh pineapple, diced
1 cup red onion, thinly sliced
1 1/2 cups mozzarella cheese, shredded
1/4 cup fresh cilantro, torn

Directions:

1. Prepare dough according to directions.
2. Preheat oven to 550º for 1 hour, placing a baking stone on very top rack. Remove dough from fridge, allow to come to room temperature.
3. After 1 hour, turn oven off. Turn broiler on. Sprinkle flour on a large working surface. Roll dough into a large circle.
4. Remove baking stone from oven and place on baking stone rack. Be careful, the stone is hot! Sprinkle cornmeal over baking stone. Move pizza dough circle onto baking stone. Brush BBQ sauce onto dough. Distribute pulled pork, pineapple, and red onion evenly over dough. Evenly sprinkle mozzarella over dough. Broil in preheated oven for 5-7 minutes, or until cheese is melted and pizza has begun to form blistered pockets all over. Remove from oven (carefully!), sprinkle with fresh cilantro, and slice. Serve immediately!

25 Meatless Meal Ideas

Yay! It's Friday!

My 25 Easy Mexican-Inspired Recipes post went over so well, I thought I'd do another 25-recipe roundup. The Mexican-Inspired post was one of my most viewed posts of last month, so I think, I think, you guys like them. It's unusual that my most viewed post of the month is posted on the last day of said month. Plus, I have another reason I'm doing a roundup. Occasionally I get into a mood where none of photographs look good to me. I've got 3 posts in the pipeline and I couldn't bring myself to post any of them because none of them were "good enough". These moods come and go, so I'm guessing I'll end posting all of these recipes at some point. I suspect all photographers are like that at some point.

Meatless meals. While the hubby and I are by no means vegetarians (as evidenced by the 2 large New York strips we devoured early in the week!), we do try to eat a balance between lean meats and meatless meals. We mostly eat chicken, which we have 3-4 times a week while the rest of the week we eat meatless. Once or twice a month, we eat steak or ground hamburger. Some weeks, we have a couple of turkey meals. Some weeks, we have a couple of seafood meals. We rarely eat pork anymore. The most pork we eat is bacon a couple of times a month. I know a lot of people don't consider a meal a real meal unless it has meat. However, in the last 2-3 years that the hubby and I have been experimenting with meatless meals, we've found meatless doesn't have to be light or un-filling. Meatless meals can be just as satisfying, sometimes more so. I've found you can eat a lot more when you are eating more vegetables than meat. I've also found my weight is easier to maintain with the hubby and I's current grubbing. Plus, the best part- meatless meals tend to be cheaper. Meat is expensive, and only seems to be getting more so these days. I'd highly recommend trying a meatless meal once or twice a week, just to try it out and see if it's something that would work for you.

Well, the weekend is here and the hubby has to work all weekend. Boo. I've got a busy day on tap that includes a trip to the big box store, the dreaded Walmart, prepping the hubby's lunches for a stint of day shifts, a photography session, and making a large batch of soup. Whew. It's going to be a busy day. Tomorrow, I'm starting up workouts again (feeling lots better!) and cleaning house, and Sunday shall be reserved for football and reading. So that's my weekend, hopefully yours is going to be a tad more exciting than mine :)

Have a great weekend bloggy friends!
