Homemade Oreos


Today is my little brother's birthday (Happy Birthday Bro!), so I thought it fitting to post the cookie that he chose for his birthday treat this year. Technically, he chose "dipped Oreos" but one first needs Oreos in order to dip. He did mention that the Oreo's didn't have to be homemade, he just wanted different flavors of dipped cookies. The hubby said asking me to send commercial Oreo's was like asking Gordon Ramsey to send a Big Mac. I snorted in derision and told him I was probably more like Guy Fieri sending take-out from a diner, drive-in, or dive he visited. In the end, I opted to make the Oreo's before dipping them.

Recipe Redux: Chocolate Chip Banana Bread


Happy Monday friends! I promised in January that I was going to share this recipe soon, and then... I went on break. However, I'm back, it's spring, and it's time to talk about chocolate and banana. Only one of the best foodie combinations ever, if you ask me. Next to chocolate and peanut butter, and maybe peanut butter and banana, of course ๐Ÿ˜‚  I enjoy a good banana bread on its own but when you add chocolate, it just takes it to another level! ๐ŸŒ๐Ÿซ

25 Cake & Cupcake Recipes


Oh, Saturday morning. How I love thee. I woke up rather lazily today, with one well-behaved chihuahua at my side and a not-so-well-behaved one deciding to sit on my chest and lick my face. Face Licker had decided it was time to get up. Face Licker being Mariota, that is ๐Ÿ˜‚ 

I shuffled my way to the Keurig and made a cup of coffee, admiring the view out the window whilst the coffee brewed. It rained last night, which makes me happy. That saves an hour of yard work. I also noted the bird feeders were quite full. It never fails that there is lull in bird activity every summer. The hawks have been staking out the yard fairly aggressively which every year has meant the birds leave for a little while. They'll be back. But that was another chore that didn't need to be done. 

It was a great morning. All I had to do was fill the bee waterers with fresh water and pick some strawberries. I honestly thought the strawberries would be spent by now, but they are really showing no signs of stopping. I'm thinking I'm going to be picking fresh berries every day until the first frost. Which, of course, is fine by me.

Raspberry Peach Jam


Fall is coming!

Yeah, it's still August, but it's starting to feel a bit like fall around here. Some of my trees are changing color and losing leaves already. The hummingbirds are beginning to get fatter and there's a lot more of them around the last couple of days, something that usually doesn't happen for a couple of weeks around here. This morning when I let the dogs out, my glasses didn't fog up which means... dun dun dun...no humidity. Always a sign of fall around here. 

How can this be happening already? Wasn't I just lamenting that late frost we had in March? Didn't I just get tomato starts to baby before planting in the raised beds? How does summer always go so fast?

Holy moly. One post last week? I meant to do better you guys. I really did. Can I just say that I feel like I haven't had a moment to breathe since Friday? It's been hectic around these parts. Granted, Friday was spent hanging out with a girlfriend, so that hectic-ness was chosen. I was up at dawn baking cookies on Saturday to take to the hubby's family reunion. Dawn is my normal blogging time, so Saturday was out although I had intended to publish on that day. I figured there was always Sunday.

Arancini with Homemade Marinara


I have opened my blog several times since Sunday, with the intention to write a recipe. Each time, I sat there, staring at the screen, searching for the words that will not come. Everything I started to write didn't sound appropriate. It felt... meaningless. 

On Monday, I was reading the latest post on one of the blogs I follow, Pinch of Yum. Lindsay practically took the words from my mouth on how she was feeling. Right now, after the worst mass shooting in US history, I feel empty. Why does this keep happening? Everyone and their mother has an opinion. Most of the opinions I don't want to hear. If you can't muster the empathy to feel for the victims, people who were in that building, relatives who've lost someone that meant everything to them... I don't even know what to say to you. Here in my small corner of Kentucky, people are pretty judgmental about the fact that this shooting happened at a gay club. I overheard a lady at the grocery store in front of me in line tell the cashier that at least it was "a bunch of gay people" that died.

Homemade Cinnamon Ice Cream

My goodness, friends. That weekend? A blur. Is it over already? Where did it go? I feel like I've been going non-stop since Friday.

I know I say that every weekend, but this weekend was something else! What happened this weekend? Here goes!

Friday- The hubby and I had to drive to Columbus to meet with a neurosurgeon about my back. We got a speeding ticket on the way up. We cursed the holiday weekend and powered on to meet with the doctor. I really liked the doctor I met with, he was very professional and a lot of his patients are athletes. After studying my MRI, he's not sure if the problem is with my joint or with the actual disc. He agreed injections into the joint were the best place to start, or at least the least invasive choice. Twas' a good appointment and the hubby and I headed for home. We grabbed some sushi from Kroger, scarfed it down, and headed out to visit with the hubby's family. A little too much red wine was enjoyed, and we returned home around midnight.

Slow Cooker Salsa Verde Chicken Tacos


Fire up those slow cookers y'all!

There's so many things to love about this recipe. For one, you make it in the slow cooker. One of my absolute favorite cooking methods. Especially for things like taco meat. Two chicken breasts in the slow cooker kept me and the hubby fed for 4 days. If I'd been thinking clearly, I would have invented another recipe with the taco meat. As life would have it though, I devoured tacos for 4 straight days. 

It. Was. Glorious!

There's nothing better than savory shredded chicken, piled high with creamy avocado and cheddar cheese, all topped with a cool, crisp salsa verde and tucked neatly in a fresh corn tortilla. This is taco heaven! :-)

Cherry Berry Power Smoothies


Let's talk smoothies.

I don't post a lot of smoothies. In my mind, they could be considered one of those things that doesn't even need a recipe. I always tend to hesitantly publish smoothie recipes, bracing myself for anyone that might comment that smoothies are hardly recipes. People do make those comments! Just the other day, (no names, y'all) a blogger posted a strawberry parfait that really was just strawberries layered with piped whipped cream, and someone left a comment on her post saying "Um, when did strawberries and whipped cream become a recipe?". I hate seeing comments like that. I mean, for one, even if I was thinking that myself, I would never say it. We all work way too hard on posts to be harassed by mean-spirited comments. And two, I started wondering if people thought that about my recipes.

It's a slippery slope.

Recipe Redux: Banana Cake with Vanilla Bean Frosting


Ugh, I have been the worst blogger this month. I'm at 6 (now 7) posts for the month. I feel like I'm still on vacation. I usually post 3 times a week, but I've been averaging about 2 this month. I'm trying not to get too worked up over this, it is what it is. I've been spending a lot of time outside since I returned from my break, getting the garden ready and planting flowers. We added another raised bed to our garden this year. Year by year, the garden gets a little bigger than the year before. Obviously, the bigger the garden gets, the more time it needs. I'm feeling that this year.

Mini Butterscotch Banana Puddings


Ok. You all know how I can get into ruts? Here's a big one:

I haven't published a banana recipe since April 18, 2014. That was my Chocolate Oat Smoothies. Well, I guess technically it was my Banana Split Truffles on October 8, 2014, but I don't really count those. There's no actual banana in them! So, it's been a loooooooong time since we've talked banana.

How does that happen? I'm not sure. It's kind of like how I fell off the Asian wagon in 2015 and only posted 2 recipes. This banana-drought might be worse though, since I didn't post a single banana recipe last year. We are going to remedy that today with this quick, easy, kid-friendly, and delicious dessert!

Vanilla Quick Bread


There is a strategic reason I'm posting this bread today. I'm posting it today because it is, officially, the perfect vehicle for my Blackberry-Nectarine Preserves. The two go hand-in-hand like chips and dip, or bacon and eggs. Although, I must confess, this bread is a great companion for pretty much any fruit spread. I slathered some Raspberry Jam on it, and my taste buds were equally pleased. Perfect for breakfast to serve alongside coffee, or a light dessert if you want to add some pudding and whip cream to the mix. Yummmmmm....

Toasted Almond & Salted Caramel Bark



Oh yes. It's Friday, and boy do I have a treat for you guys! Because what better day of the week to reward yourself than Friday? And let me tell you, this bark candy is truly a treat. It's super easy and fast to make, crunchy, sweet, and salty. It's only February, but I'm already thinking this will be going in my Christmas Cookie boxes. It's that good.

Cookies & Cream Cupcakes (Red Velvet Style)


You guys might recognize these cupcakes. These perfect-for-Valentine's-Day cupcakes are indeed the same cupcakes that gave me fits. The first run was a disaster, this particular batch slid off the cooling rack, and I lost my cool multiple times. Anyone out there who thinks food blogging is glamorous because of all the pretty pictures, beware. There's a multitude of hair-pulling, slipper-throwing, fist-shaking, and oh-so-ugly pictures that come with the territory.

And there was plenty of all that during the making of these cupcakes.

Well, as always friends, I had the best intentions to blog on Monday. However, the day had other plans. You see, the hubby and I have been having the worst problems with DirecTv. We've been having multiple outages and our box resets every couple of hours. It's been happening more and more often since DirecTv merged with AT&T. Over the weekend, the hubby and I reached our breaking point and scheduled a technician to come out and switch our boxes. And our appointment just happened to be at 8 am yesterday. Prime blogging time for Jessica. I should have known there would be trouble.

Beer-Battered Fish & Chips


This one's for you Dad! :-)

I cannot tell you how much my family loves fish and chips. When my younger brother and I were little, little kids, I can remember Skippers being a family favorite destination. We would get soooooo excited if my parents said we were going there. I mean, I know we loved the little red jello's that Skippers hands out with every meal, but we also liked the fish. And the chips. While Skippers is kind of a no-go these days, fish and chips is still a classic. It's one of those meals where if it's on a menu at a restaurant I'm currently calling on, I'm likely to choose it. That being said, the selection of fish and chips around these parts is sadly, nonexistent. The hubby and I love to go to our local brewery for pizza and beer, but I expressly avoid their fish and chips. First of all, they use haddock. Not a favorite of mine. Plus, they bread theirs and it doesn't have a lot of flavor. The other restaurants in town? They all seem to order (and serve) exactly the same frozen food, so I can honestly say, there's no where to get fish and chips around here. We'd have to drive an hour to Huntington, and needless to say, we don't do that often.

Frozen Blueberry Popsicles, 3 ways


Popsicles?

Yes, you read that right. I'm posting popsicles today. In October. 

Summer may be long gone, but you know what? I don't care! I love popsicles. I really do. I eat them year round. Homemade popsicles are a great snack and one of my go-to's after dinner. Mine are mostly fruit, unlike those heavily preserved store bought ones that claim they are 0.000001% real fruit. These ones only require a few ingredients, and you can make them all year round by utilizing frozen fruit. Thank goodness for frozen fruit, I don't know how I'd survive all winter without it!

Peanut Butter & Jelly Muffins

 

Guess what???

I saw my first hummingbird of the season last night! I was soooooooo excited. The hubby and I were watching "Mad Men" when I caught the first glimpse. Yes, the hubby and I are quite behind on "Mad Men". We actually hadn't watched a single episode since we left Portland. We estimated this left us at the Season 4 finale. However, we estimated this after we had re-watched all of Season 4 and before we subsequently realized we watched it in Portland. For the love. Here's the funny part- both the hubby and I remembered some moments from Season 4, but for the most part, it was all new. We cannot figure out, for the life of us, how we watched all of Season 4 in Oregon, and somehow don't remember most of it. Anyhoo, we've recovered from that faux pas and we've steamed ahead. We just started Season 6. Just as enthralled as ever. In fact, it's making me want to create cocktail recipes and Chicken Kiev for the blog... but back to that hummingbird-
