Blackberry Nectarine Lush


Happy Monday everyone!

I hope everyone had a wonderful and relaxing Easter. I know we did! The hubby and I headed out to his sister's house to have dinner with the family. It also happened to be my mother-in-law's birthday, so we had quite the Easter celebration. We had it all. A turkey and a ham. Two pasta salads. A big chocolatey, butterfinger-y birthday cake. Kids hopped up on way too much sugar... You know, the normal Easter fare πŸ˜‚

Wrapping Up December: 2016


Ok, so I know it's 4 days into the New Year but......

December was way too busy and waaaaay too much fun to not wrap up 😁 This post is long and picture-heavy, and I have so much to discuss that I'm not even going to waste time on an introduction. Let's go!

That first picture is the garden on December 1st. The marigolds had finally had it, and so had pretty much everything else. I've still got some rosemary and some thyme alive, but that's it. The cold weather we had in Kentucky while the hubby and I were in Oregon even got my parsley. Darn it.

2016: By The Numbers

Well, well, well. Here it is the first day of 2017 and I'm going to wrap-up the year of 2016 before I even wrap up the month of December 2016. Why? Because I want to. Because I'm a rebel. But mostly because, as per usual this year, I'm running behind. The story of my life πŸ˜„

Now that the holidays are almost over and the hubby and I are tucked back into our own house again, it's time to make it a better year. I mean, there's no election this year so we already know it's got to be a superior year, right? πŸ˜‰ Right. I'm going to save my New Year's goals (and 2016's learning experiences) for another day, and simply talk numbers. Here's 2016 by the numbers-

Autumn Pork & Squash Stew


First, the bad news...

Guys, I have been looking at my calendar and it's not looking good. December's schedule is going to be busy. Busy with a capitol B! I've started physical therapy again, 3 times a week. Christmas shopping needs to be finished. Our niece's birthday is at the end of the week, and we've planned a shopping trip and a sleepover. Not to mention making her a cake and getting her back home for her official birthday party at my sister-in-law's. There's Christmas with our Kentucky relatives. Packing to go to Oregon in 12 days. And goodness knows what we're going to get into while we're on the West Coast! We may only have a trip to Southern Oregon and a wine-tasting date planned, but that always changes. Fast

Wrapping Up November: 2016


How is it December??

This year has simultaneously dragged on, and in the same inexplicable breath, flew by. Where did 2016 go? November was a pretty busy month for us, as it is for most with the Thanksgiving holiday. December is set to fly by too, as the hubby and I are leaving for Oregon in 15 short days!! I'm so excited, I haven't spent a Christmas in Oregon since Christmas 2009. It's definitely time to head home for a holiday!

Cinnamon Pumpkin Cookies


Sheesh, you guys. I knew last week was going to be crazy, with the holiday and all, but not nearly as hectic as it was. I feel like I've had 2 seconds to myself in the last 7 days or so. Besides hosting Thanksgiving at our house, I had the funky cold from Hades, we had a water leak the day before the holiday, I had more MRI's done, and finally, the hubby got the new iPhone he's been dreaming of after we drove 256 miles to get it. Needless to say, it's been cray-cray around here. 

Update:

Cold is gone. Yippee! 

Water leak was fixed and Thanksgiving prep was finished. Thank goodness.

MRI's were completed. They weren't fun, but they are done. I loathe whoever created those detestable machines.

The hubby loves his new phone 😁

Turkey Bacon Avocado Paninis


It has been one of those kind of weeks.

Last Monday, a familiar but most unwelcome acquaintance set up shop in my house- the common cold. And ugh, it has been anything but fun. I've been running the gambit from sore throat to fever to head fog to a lost voice. Truly, by the end of the day Saturday, the hubby and I were communicating by text. I'm normally a very quiet person, but found the sensation of not being able to talk very unpleasant. Not cool when you are trying to watch Oregon football! 😑 Luckily, I'm on the mend. My voice is back and with only a nasty cough left, I'm pretty much over the hump.

Good thing too, because I'm doing the Thanksgiving shopping today πŸ™€

Buttermilk Brined Turkey Tenderloin Dinner


Are you having a small(ish) Thanksgiving this year? Or people over who claim "I just don't like turkey!"? What about guests that will only eat white meat? Or picky children who refuse their plate if a piece of dark meat touched something on it? If you answered "yes" to any of the preceding questions, turkey tenderloins might be for you! Turkey tenderloin is soooooo moist and flavorful, and you won't have near the leftovers you would cooking a whole turkey. Plus, everybody loves that breast meat, right? You might even win over that person who doesn't like turkey! 😁

Since I've Been Gone: July


Hi friends! It's been soooooooooo long. I didn't even mean to take such a long break, it just kind of... happened. I've had a pretty full house since I've been gone, but sadly, it's now empty. My family came to visit for almost a month, and it was AWESOME. Awesome to see and have all my family here, but I did suffer a touch of writer's block. I meant to post the week before everyone got here, but each day was crammed with chores to get the house ready for family. It seemed like every night I went to bed before their visit with a to-do list for the next day pounding in my head. This left little thought for writing.

Homemade Cinnamon Ice Cream

My goodness, friends. That weekend? A blur. Is it over already? Where did it go? I feel like I've been going non-stop since Friday.

I know I say that every weekend, but this weekend was something else! What happened this weekend? Here goes!

Friday- The hubby and I had to drive to Columbus to meet with a neurosurgeon about my back. We got a speeding ticket on the way up. We cursed the holiday weekend and powered on to meet with the doctor. I really liked the doctor I met with, he was very professional and a lot of his patients are athletes. After studying my MRI, he's not sure if the problem is with my joint or with the actual disc. He agreed injections into the joint were the best place to start, or at least the least invasive choice. Twas' a good appointment and the hubby and I headed for home. We grabbed some sushi from Kroger, scarfed it down, and headed out to visit with the hubby's family. A little too much red wine was enjoyed, and we returned home around midnight.

25 Side Dishes


Hey hey! We've got a holiday weekend coming up y'all!

The Memorial Day Holiday weekend is upon us. I don't know about you, but ever since we moved to Kentucky, Memorial Day has been spent with the hubby's family. The hubby's cousin and his wife drive in from out of town, and we all gather together for a family barbecue. This time, the hubby's cousin and his wife are bringing their new baby girl for everyone to meet! We are excited. The weekend is promising to be very sunny, right now they are forecasting a high of 90ΒΊ. Whew! Good thing the hubby's-cousin's-wife's-mother (whose house we party at) has a pool. The pool is the best part of the get-together, at least as far as all the nieces and nephews are concerned :-)

Fresh Salsa Verde


Happy Cinco de Mayo!

Those that have been following the blog for awhile know that Mexican food is my favorite! I can't help it, I love those fresh flavors. Tomatoes and peppers and cilantro, oh my! And Mexican chip-dippers are one of my specialties. Salsa has been one of my favorite snacks since I was a kid. There were years where I snacked on chips and salsa every day. I'm not even kidding you. This lasted through college (there were classes all I could think about was salsa, but that's another issue entirely), and years after. Sometimes I take short breaks from salsa, but they never stick. Last summer, I ate guacamole almost every day from June until October. This summer however, I have a feeling it's going to be all about the Salsa Verde.

Happy St. Patrick's Day everyone!

Break out the green drinks, food, clothes, etc. and let's celebrate! I've always enjoyed St. Paddy's day. Granted, St. Paddy's day in college and the short time after graduating basically means you drink until you drop. This is not so much the point of the holiday as you get older, but it still holds a special place in my heart.  I may only have one green cocktail and one Thin Mint cupcake, but I'll be toasting my 21-year-old self who loved to come no earlier than dawn with green glitter in my hair and shamrocks painted on my face. Days long gone, but not forgotten.

Recipe Redux: Chocolate Chip Coffee Muffins

We've had some weird and wacky weather around here lately. The chihuahuas couldn't be more displeased. Especially Mariota. I've never had a dog that does his business so fast. I mean, even with 4 inches of wet, sloppy snow on the ground, Haloti will follow his nose outside until the iciness of his poor little paws catches up with him. Gizmo keeps wanting to cross the snow field over to our neighbor's house. Those 2 want to smell things all. day. long, even with snow on the ground. But Mariota? His process is more like this: run out the door, hike leg on small trees the hubby and I planted by the front sidewalk, run like hell back to the house. Done. It's amusing.

Cookies & Cream Cupcakes (Red Velvet Style)


You guys might recognize these cupcakes. These perfect-for-Valentine's-Day cupcakes are indeed the same cupcakes that gave me fits. The first run was a disaster, this particular batch slid off the cooling rack, and I lost my cool multiple times. Anyone out there who thinks food blogging is glamorous because of all the pretty pictures, beware. There's a multitude of hair-pulling, slipper-throwing, fist-shaking, and oh-so-ugly pictures that come with the territory.

And there was plenty of all that during the making of these cupcakes.

My 2016 Goal: Authenticity


Another New Year. Time to stop and reflect on the passing year. I'm a few days late, but that's never stopped me before. Just for reference, I want to put last year's goals out there, so here's that post. I'll just tell you right now, in terms of New Year's goals, 2015 was a dismal failure. Running 500 miles? Try 145. Learning to can? Nope. We had a woebegone summer in the garden, so there really wasn't anything to can anyway. Rebuilding my stockpile? Just didn't happen.

Am I going to sit here and think of the entire year of 2015 as a failure? Absolutely not. Good things happened in 2015 too. Oregon won the Rose Bowl and went to the National Championship. The hubby and I added a puppy to our family. We went to Oregon. We got a new computer and updated the master bedroom. Our niece and our nephew began having their first sleepovers at our house. I learned how to make pie crust. 2015 was filled with as many victories as losses.

I can't believe that tomorrow is Christmas Eve! Wowsers, this season has gone fast. And with the arrival of Christmas, I present to you the last of my offerings. The humble Christmas Cookie Dough Truffle. Decadent, eggless cookie dough, covered in melted chocolate, and doused with a good helping of sprinkles. If you love cookie dough (and I'm certainly one of those people), you will love this candy.

Chocolate Peanut Butter Swirl Cookies


Time for my favorite cookie of the year!

These Chocolate Peanut Butter Swirl Cookies are so darn yummy. Seriously. Both sides are soft and chewy, studded throughout with chocolate chips. The chocolate side is decidedly chocolatey, while the peanut butter side is perfectly subtle. It tastes like peanut butter without being dry and mealy. Always a good thing when you are talking about cookies! And while these cookies do require chilling (keep that in mind when you go to make them. Believe me!), they really aren't too much work. I loved the technique of rolling the two doughs together, so creative. More on that later. In the meantime, let's go over how to make these delicious drops of heaven!
