Signing Off


Truth be told, I've been putting this post off for... about 3 weeks. Although it's time, it's been difficult to go through with my decision. 

I'm signing off. 

Why?

One can't predict the twists and turns that are going to happen along the way in life. One twist my life has taken this year is I've decided to write a book. Another is I've lost some passion for food blogging. I'm not saying I'm going to be gone forever, but I will be gone for an indefinite amount of time. Until the book is done I've decided and I just don't know how long that will be. A month, 2 months, 6 months, a year... who knows? All I know is this is best choice for me now, especially with it being summer. Between the garden, the yard, the house, my book, family and friends, I don't have time to devote to blogging like I used to. And time it does take.

May 2017- So far!


Ugh, what am I? The worst blogger in the world? Probably 😂

I admit, my posts have been more sporadic than even I intended. I'm just so in the zone working on my fiction piece. I keep thinking I've got it finished, and as I go to do my final read, I usually decide I want to add more and write furiously until I think I've finished again. At this point, the cycle repeats itself. It's quite the process, trying to write a book. I've been doing research online to see how many words adult novels are supposed to be and I've found quite the wide range of answers. I've read 55,000 words would be considered adult fiction while other sites state that's way too short. Some say 110,000 words is the maximum amount of words a novel should be, but then I discovered some of my most favorite novels are way longer than that so-called ceiling. 'Gone Girl'? 145,700 words. 'Big Little Lies'? 142,600 words. 'The Martian' hits 124,000 and 'The Da Vinci Code' comes in at 138,000. I think my new goal is 90,000. I vacillate daily from thinking I'm utterly crazy and destined to fail, to believing I can do this while pumping one fist in the air. So, to quote what has become my official party line, I apologize for the lack of recipes and posts. I've barely been cooking while in the zone, let alone working on any photography.

A Day In the Life: April 2017


I haven't done a "Day in the Life" post in forever (since February of 2013!!), so today I thought I'd have some fun. I'm also changing the format of the traditional "Day in the Life" post, just cause I can 😜

I woke up yesterday with the intention to blog. It was one of those mornings where I felt completely uninspired and couldn't come up with anything to say. I wrote out a post and then I reread it. Even I was bored. Deleted. One of my intentions since coming back from my break was to share quality work, not just sharing work for the sake of sharing. So I decided to take the day off from posting. To work in the garden. To do some yoga. To enjoy my pups. It was then that I had the idea to do a "Day in the Life" post so I decided to take some pictures throughout the day.

BLT Poached Eggs with Avocado Hollandaise


This is kind of a spur-of-the-moment post, as I actually just made this dish the day before yesterday. I say "spur-of-the-moment" because usually I spend weeks or months working on a post. Making and remaking a recipe so I can take and retake photos. Rearranging the pictures in the post. And then, I usually spend a couple of weeks looking at the photos daily, deciding if I want to share them.

Things sure have changed since I first started the blog 😂 

This dish is so tasty though, I couldn't wait to share it. It's pretty darn easy and fool-proof for how delicious it is. You won't believe how simple it is to make the Avocado Hollandaise, I think it's 100 times easier than real Hollandaise! I also like the flavor better than the real stuff, but I digress. Let's talk about this dish and my inspiration for it!

Homemade Oreos


Today is my little brother's birthday (Happy Birthday Bro!), so I thought it fitting to post the cookie that he chose for his birthday treat this year. Technically, he chose "dipped Oreos" but one first needs Oreos in order to dip. He did mention that the Oreo's didn't have to be homemade, he just wanted different flavors of dipped cookies. The hubby said asking me to send commercial Oreo's was like asking Gordon Ramsey to send a Big Mac. I snorted in derision and told him I was probably more like Guy Fieri sending take-out from a diner, drive-in, or dive he visited. In the end, I opted to make the Oreo's before dipping them.

Jalapeño Popper Pizza


It's Friday and we're going to talk about pizza. As such, I hereby open with this quote,

"You can't have Thanksgiving without turkey! That's like Fourth of July with no apple pie, or Friday with no two pizzas!"

I bet you can guess what show that quote is from... 

If you guessed 'Friends', you guessed right 😜 What can I say? I was picking up the house this morning, doing my normal chores, making the bed, and thinking about what I was going to write today. I started thinking about pizza... and that it's Friday... and the quote just popped into my head. Quotes from 'Friends' strike my mind every day in almost any situation, and while we won't be having 2 pizzas this Friday, the quote still made me smile.

Recipe Redux: Chocolate Chip Banana Bread


Happy Monday friends! I promised in January that I was going to share this recipe soon, and then... I went on break. However, I'm back, it's spring, and it's time to talk about chocolate and banana. Only one of the best foodie combinations ever, if you ask me. Next to chocolate and peanut butter, and maybe peanut butter and banana, of course 😂  I enjoy a good banana bread on its own but when you add chocolate, it just takes it to another level! 🍌🍫

Time for that fish I was yammering about! I told you guys I finally got it right 😃

Fish is not something that's usually hard for me. Maybe it's because I usually cook it on the grill? Or deep fry it? I don't know what happened before that I usually never have it sticking to that pan, but for this dish, the fish kept sticking. I do have a tendency towards beginner's luck which could explain my past successes. And when you have to tend to be fortunate the first time, you don't learn the chemistry. So, for anyone having problems with sticky fish, here's my tips-

Wrapping Up January: 2017

Seriously. It's February. Of 2017. Unbelievable.

January was (thankfully) not as busy as December you guys. However, it was busier than I expected. Not a lot of time for writing and the blog, but this is also a time period in history unlike anything I've ever seen. I don't know about you, but I'm finding it hard to write. Especially about food. It seems to me that everyone is angry these days. And I do mean everyone. The right and left alike are fired up. I mean, if you read any comments on any political piece, you will see anger. From both sides. I want to write about it, but I am still searching my soul for something to say that's not divisive. 

It seems an impossible task.

25 Seafood Recipes


Time for a round-up!

I haven't posted a round-up since September, so it's definitely time. And this has to be one of my favorites because seafood? I would eat it at EVERY meal if I could. Seriously! But there's another reason I'm posting a round-up today-

I've spent the last 2 days in the kitchen, up to my ears in potato parts and banging my head against the counter. What's going on? Gnocchi, that's what. I've been trying my hand at homemade gnocchi. You know, those little Italian potato dumplings that are like little clouds of dreaminess? It has not been going well. It turns out there are lots of mistakes to be made while attempting gnocchi. So far, I've had gnocchi that fell apart in the pot, I've had mushy little balls with a texture that can only be compared to snot, and finally, I had a dough that came apart at the seems.

Sometimes, as much as you want things to be different... as much as you tell you yourself it will be different... sometimes things take longer to change than our well-intentioned selfs would like. As much as I would like to say that I left 2016 in the dust and 2017 is already waaaaaaay better, sometimes life just doesn't work like that. 

16 days into the New Year and I'm already beating myself up for the lack of posts. I'm mad at myself for still feeling the effects of last year's depression. Why can't it just be gone?

Pesto Stuffed Shells


It's the first recipe of 2017! Yipee!

11 days into the new year and I'm finally getting around to posting about what I do best- FOOD! This recipe is a keeper, I'm telling you. Perfect for a frigid winter day full of ice and snow which I know a lot of us are dealing with right now. We only got about 2-3 inches last week and most of it melted on Monday. Today's temperature is supposed to be a lot warmer though (thank goodness!) because it's been a week of temperatures in the teens. Brrr! But I guess our snow is nothing compared to what's been going on in my former home of Oregon. They are getting more snow than I've ever remembered them getting, and we never got much snow when I was growing up. A snow day here or there, but not this much! In my mind, it's the perfect weather for staying in and popping a carb-a-licious casserole into the oven for dinner ☃️

Ah, long time, no see everyone!

Yes, it's the 2nd to last day of our Oregon trip and I've finally found a few moments to write. It has been Busy with a capitol B! We've been going non-stop, but man, it has been fun. I'll save pictures for when I do my Oregon or December wrap-up but we've basically been on what I like to call a "Food and Drink Tour" of Oregon. Seriously! We've travelled to Southern Oregon to dine at a couple of places in Ashland. We've stopped at a restaurant in Eugene. We've traveled to Portland to visit family and wine-taste with friends. There was a boozy breakfast in Albany. We saw "Holiday Office Party" in Corvallis. Drove the backroads through Independence. Had a wine-and-hor-dourves night with some of my biggest blog fans (Hello Glaeser family!) I can safely say I've seen the entire I-5 corridor of Oregon on this visit 😁

Autumn Pork & Squash Stew

Guys, I have been looking at my calendar and it's not looking good. December's schedule is going to be busy. Busy with a capitol B! I've started physical therapy again, 3 times a week. Christmas shopping needs to be finished. Our niece's birthday is at the end of the week, and we've planned a shopping trip and a sleepover. Not to mention making her a cake and getting her back home for her official birthday party at my sister-in-law's. There's Christmas with our Kentucky relatives. Packing to go to Oregon in 12 days. And goodness knows what we're going to get into while we're on the West Coast! We may only have a trip to Southern Oregon and a wine-tasting date planned, but that always changes. Fast

Wrapping Up November: 2016


How is it December??

This year has simultaneously dragged on, and in the same inexplicable breath, flew by. Where did 2016 go? November was a pretty busy month for us, as it is for most with the Thanksgiving holiday. December is set to fly by too, as the hubby and I are leaving for Oregon in 15 short days!! I'm so excited, I haven't spent a Christmas in Oregon since Christmas 2009. It's definitely time to head home for a holiday!

Cinnamon Pumpkin Cookies


Sheesh, you guys. I knew last week was going to be crazy, with the holiday and all, but not nearly as hectic as it was. I feel like I've had 2 seconds to myself in the last 7 days or so. Besides hosting Thanksgiving at our house, I had the funky cold from Hades, we had a water leak the day before the holiday, I had more MRI's done, and finally, the hubby got the new iPhone he's been dreaming of after we drove 256 miles to get it. Needless to say, it's been cray-cray around here. 

Update:

Cold is gone. Yippee! 

Water leak was fixed and Thanksgiving prep was finished. Thank goodness.

MRI's were completed. They weren't fun, but they are done. I loathe whoever created those detestable machines.

The hubby loves his new phone 😁

Turkey Bacon Avocado Paninis


It has been one of those kind of weeks.

Last Monday, a familiar but most unwelcome acquaintance set up shop in my house- the common cold. And ugh, it has been anything but fun. I've been running the gambit from sore throat to fever to head fog to a lost voice. Truly, by the end of the day Saturday, the hubby and I were communicating by text. I'm normally a very quiet person, but found the sensation of not being able to talk very unpleasant. Not cool when you are trying to watch Oregon football! 😡 Luckily, I'm on the mend. My voice is back and with only a nasty cough left, I'm pretty much over the hump.

Good thing too, because I'm doing the Thanksgiving shopping today 🙀

Buttermilk Brined Turkey Tenderloin Dinner


Are you having a small(ish) Thanksgiving this year? Or people over who claim "I just don't like turkey!"? What about guests that will only eat white meat? Or picky children who refuse their plate if a piece of dark meat touched something on it? If you answered "yes" to any of the preceding questions, turkey tenderloins might be for you! Turkey tenderloin is soooooo moist and flavorful, and you won't have near the leftovers you would cooking a whole turkey. Plus, everybody loves that breast meat, right? You might even win over that person who doesn't like turkey! 😁

Recipe Redux: Chicken & Dumplings


Late last Thursday night, I was awakened by a clap of thunder on the house. I bolted upright in bed as Gizmo and Mariota scurried their furry bodies underneath the covers. I looked over to where the hubby normally lays, sighed, straightened the covers up around my neck, and laid back down. 

Things are going haywire at the plant lately, leaving the hubby's supervisor with no choice but to man the station 24 hours a day. Needless to say, this has resulted in the hubby working some of those dreaded night shifts. And left me home alone on a stormy night.
