I'm on somewhat of a summer fruit bender, so by all means, let's just continue :)
Remember that Kiwi Lime Pie? Well, I bought that large box of kiwi's to use to make that pie but I certainly didn't use all the kiwis. What does this mean for you? It means you'll have to deal with a couple more kiwi recipes as I use up what's left in that box. That being said, what a wonderful purchase that box of kiwis was! They were 10-12 in the box, they were HUGE, and they were super-firm. That translates to none of the kiwis going bad, giving me time to use up ALL of them. How often can you say that about fruit you buy in bulk?
Admittedly, some of you will say "Always!" while I'd say, "Occasionally." :)
I'm in love with these popsicles. Big love. They are delish, and they taste magical. They were going to be strictly kiwi pops until I spotted a couple of containers of raspberries in the fridge that quite frankly, looked like they were on their last legs. Why not throw those in too, I thought.
I guess I technically turned them into syrup before I added them to the pops. It was an excellent decision.
My biggest problem with these popsicles has been eating one and not immediately heading back to the freezer for another. I ate most of these before the hubby even had a chance to try them. Oops.
Now, to abruptly change the subject...
Our bed was delivered yesterday!
It is gorgeous! I absolutely love it. Our mattress gets delivered in one week, so right now we have our queen mattress on the king bed. It looks a little silly, but it'll work for awhile. Since I don't have the mattress, we aren't using the new bedding yet. I take that back, the hubby just couldn't wait to break in his new pillow. Our comforter was delivered yesterday, as well, so we have almost everything for the new bed! And in one week we'll have the mattress, the last throw blanket, and the last throw pillow. Oh, and then I've printed out some black and white photos to hang on the wall behind the bed. I printed out 3, but now that we have the bed, I can see we need 4. So, I've got this week to do that and then...
It will be time for the reveal!

I'll make it. In the meantime, these popsicles will keep my mouth busy while I'm dreaming of new bedding, down comforters, and king-size mattresses. Oh, and then there's the fact I have 4 more kiwis to create something out of :)

Ingredients (makes 6 popsicles):
Kiwi portion-
4 large kiwis, peeled and sliced
2 tbsp sugar
1/3 cup water
Raspberry portion-
2 cups raspberries
2 tbsp sugar
Directions:
1. In a food processor, combine kiwis, sugar, and water. Blend until smooth. Fill popsicle molds about 3/4 full with kiwi mixture.
2. In a small saucepan on the stove, add raspberries and sugar. Cook over medium heat for 5 minutes, or until raspberries have broken down. Push raspberry mixture through a fine sieve, reserving the raspberry juice. Discard seeds and pulp.
3. Add raspberry syrup to popsicle molds, filling until almost full. Swirl the mixtures together with a popsicle stick to achieve a swirled look, or just leave the raspberry base. Stick popsicle sticks in the molds and freeze for 5-6 hours. Run molds under hot water to release popsicles from molds when frozen. Store in an airtight Ziplock bag in the freezer.
