  1. Hey, we did the black bean-spinach enchiladas last night! Really good - Mom loved 'em too. One suggestion - make the sauce thinner than they recommend. A lot of it soaks into the enchiladas while they're baking and it almost becomes a casserole instead of individual pieces. The recipe calls for three cups of stock. Next time I'll use 4 cups. Also, the sauce is sneaking up on Los Garzas but still is not quite there. Very close however!
