Since I've Been Gone: August (So Far)

Ok friends, let's wrap up this time period of me being gone forever and a day. I've finished up talking about July, so let's talk about August so far. August has been pretty typical around here, lots of humidity (oh lord, the humidity) and heat. Also, lots of rain. I'm happy with rain in the summer though, we get such crazy downpours that I don't have to water the garden for 2 days. Talk about shaving some time off the chore wheel. But honestly, when you are talking about August in the garden (at least for me) there's not a lot to do. This downtime feels so crazy after the frenzy of landscaping the hubby and I did during the early summer. I can't complain though, it's a lovely contrast. I much need the rest after having such a full house. And August of the family's stay here was pretty busy-

Chocolate Avocado Quick Bread

I've been eating an abnormal amount of avocados lately. It's just been one of those phases. You know, the periods in your life where you become so obsessed with something you find yourself eating it everyday? This seems to happen to me all the time. As of late, it's guacamole. Multiple times a week, I've been finding myself at the grocery store picking up yet another 2 avocados. 2 avocados makes enough guacamole for me to eat for exactly 3 days. If I'm not sharing my guac, that is. I mix it with finely minced red onion, fresh cilantro from the garden, a little lime juice, and a smattering of kosher salt. It's guacamole perfection, every time.

Blueberry Peach Crisp

This recipe is brought to you today by my insatiable hunger for summer fruit. If I could bathe myself in summer peaches, watermelons, raspberries and really, all berries, etc- I would.

Just ask the hubby. I'm literally obsessed with fruit in the summer. Every summer.

Eggplant and Orzo Casserole Soup

I've got another leftover recipe for you!

When my parents were visiting last month, I made my Cheesy Eggplant and Orzo Casserole for them. Even though there were 4 of us chowing down on it, I still had significant leftovers. I've said this before, and I'll say it again, it's hard to make proportionate casseroles. With 2 in my household, I always wind up with proliferous amounts of leftover casserole. Heck, even with 4 munching on this casserole, I still had a lot of leftover food. I had an idea with this casserole however...

Why not turn this?

Into this!

It was super easy to make this jump. While the casserole was still cold, I removed the melted cheese layer from the top. It just came right up, although it did take some orzo up with it. Sacrifices, right? Anyhoo, I heated up some chicken broth and when it came to a simmer, I dumped the entire casserole into the pot. Then I added a 10 oz bag of spinach. A dusting of parmesan cheese,  and some crusty french bread were all we needed to round out the meal.

I have to admit when I told the hubby about this idea of mine, the look on his face wasn't exactly encouraging. I think he thought I was crazy. Dumping a casserole into soup? Unheard of. For a moment, I hesitated. Maybe it was just my crazy mind, thinking this combination might work. But in the end, what was I going to do with all this casserole? Throw it away, probably. So I decided to foray ahead. Might as well give it a try.

The hubby's opinion quickly changed upon first bite of soup. He was genuinely surprised the soup was good. I was satisfied by his quick change in attitude. Everything in the casserole makes for excellent soup bedfellows. Orzo, mushrooms, eggplant, red bell pepper- all perfectly seasoned. What leftover casserole I had made a big batch of soup, so I was also able to freeze a bag of it. Another meal in the pipeline! Another economically and nutritionally sound dinner choice. We all win.

So, the hubby and I are currently getting everything ready to go on vacation. We headed to Huntington, WV yesterday to stock up on anything we still needed for the trip. Which was basically stuff for the hubby. He came home with swimming trunks, 2 pairs of jeans, 3 polos, and a pair of shoes. Oh, and a Beats Pill wireless speaker. His birthday present. Let me just say, he's more excited about his birthday present than anything we bought for Mexico :) I didn't need as much, but still managed to find excellent clearance at Old Navy. I ended up with 3 tanks, 2 pairs of shorts, and a sundress for $20. That's my kind of shopping.

I'm getting really, really excited for Cancun. I've got beach brain. All I can think about is sun. And more sun. Oh, and then some more sun :) I'm pretty sure this dreary fall is bumming me out...

And with that, I'll leave you with the recipe. Happy Wednesday everyone!

Ingredients (serves 4):

6-8 cups chicken broth (depending on how much leftover casserole you have)
Leftover Cheesy Eggplant and Orzo Casserole (I used ~4 cups)
1 (10 oz) bag of baby spinach
salt and pepper
garnish- parmesan cheese (optional)

Directions:

1. In a large stockpot, bring chicken broth to a simmer. When hot, add leftover casserole and bag of spinach. Heat, stirring occasionally, for 3-5 minutes. Season to taste with salt and pepper.
2. Divide soup into bowls and garnish with parmesan cheese, if using. Serve immediately.

Cherry Pie Bars

Today is a big day.

It's the hubby's and I's 5th anniversary today!

We cheated last night and went out for a couple of beers, even though we are going out today. We were sitting in our local brewery, talking brewing beer with the guy that makes the beer. The hubby was lively and engaged (he loves talking about brewing beer, and has no one to talk to about it around here), and even got to sample a couple of beers that the brewery hasn't finished yet. He was getting so excited over beer, and he was just so happy. It's moments like these that make my heart overflow, and I realize there's nowhere else I'd rather be.

Yes, I'm 2700 miles from home, my family, my friends, living in the boondocks on the Ohio-Kentucky border. But I love it! I'd follow that man anywhere. He could tell me we were moving to Cameroon and I'd probably say, "Ok!".

I take that back-I'm not sure about Cameroon :)

But seriously, we did discuss our marriage over craft beers. Not every couple makes it to their 5th anniversary, and for that, we are grateful. I won't sit here and tell you that everyday is easy, because it's not. No matter what, there are 2 separate and distinct people living in my house and sometimes, sometimes they are going to clash. That's life. That's marriage. For better or worse, right? How in the world are you going to know when the better times are when you've never experienced the worse? How are you going to trust that person and know that they are strong enough to help you through if you haven't come through on the other side of a crisis? The hubby and I've had our share of hard times, and you know what? For that, I'm grateful as well. We make a great team, and I feel I could make it through anything with him at my side.

I'll climb down off my marriage soapbox now. It's jut a topic that makes my blood boil, what with the younger generation treating marriage like Kim Kardashian. Going into a marriage with the thought in their heads, "You know what? If this doesn't work out, I can just get a divorce!". Uh, kids, if that thought is in your head, perhaps you should contemplate the marriage a bit longer before taking the plunge. Girls these days though, all they seem to care about is the white dress, the ring, walking down the aisle, and having their day in the sun. Not one thought about the day after the wedding. Or the next 18,262 days after that.

What do you know? Almost went off on my soapbox again! Let's talk about these bars now, shall we?

You are going to want to make these bars. They are amaze-balls. The hubby doesn't like cherry pie, and even he went gaga over these bars. They are the perfect portable version of cherry pie. Yummy, gooey cherry pie filling baked over chewy, almond sugar cookie with a creamy vanilla drizzle over the top. It doesn't get much better.

One tip- After I baked these, I knew they were going to be hard to get out of the pan. I meant to put them in the fridge for 20 minutes before cutting them, but accidentally left them overnight. This completely changed the texture of the bars. If you are going to go this route, be sure and take the bars out of the fridge right away. The bars will keep at room temp that way. However, the bars are darn good cold too, so you could store these in the fridge if that's your preference.

The hubby and I were going to go out to dinner at a fancy restaurant tonight, however we completely scrapped that plan over beers last night. I know, I know, what kind of a foodie am I anyway? I'm turning down the chance for absolutely hands-down amazing food? Call me crazy. We decided to head to Huntington, WV and go for a run, to the mall, and to our favorite bar for margaritas and tacos. This plan fits us much better :)

Happy Wednesday everyone!

Ingredients (makes 16-20 bars):

1 cup butter softened
2 cups granulated sugar
4 eggs, room temp
1 tsp vanilla extract
1/4 tsp almond extract
3 cups flour
1 tsp salt
1 (21 oz) can cherry pie filling
1 cup powdered sugar
2-3 tbsp vanilla coffee creamer

Directions:

1. Preheat oven to 350º. Grease a 9x13 pan. Set aside.
2. In a large bowl, cream butter and sugar for 1-2 minutes with a hand mixer, or until light and fluffy. Mix in eggs. Mix in vanilla and almond extract.
3. In a separate bowl, whisk together flour and salt. Add dry ingredients to wet. Mix until combined.
4. Spread 3/4 of dough into pan. Spread cherry filling on top of dough. Drop spoonfuls of remaining dough on top of cherry filling. Bake in preheated oven 35-40 minutes, or until bars are lightly browned on top. Remove from oven, and allow to cool for 60 minutes in the pan.
5. In a small bowl, whisk powdered sugar and creamer together until you get a good "drizzling" texture. Drizzle the glaze over the bars. Allow the glaze to set for 30 minutes. Slice into bars, and serve immediately. Store in an airtight container.

Chipotle Shrimp Tacos with Lime Sour Crema

Let me tell you, it's an almost impossible task to feed me tacos I don't like. I'm not picky, I've eaten them from everywhere, all over the country. While I eat them all, I do know a good taco when I come across one. There's a very modern taco shop in Huntington, WV called Black Sheep that I love. They are one of those places that serve unlikely taco combinations like duck with pickled blackberries (to die for) and brisket with blueberry sauce (drool). There's just so much flavor in their creative tacos. And speaking of flavor...

These tacos are packed with flavor. That was the first comment the hubby made after trying them. Actually, it was just that one comment and then these tacos were magically gone from his plate. He's not the lover of Mexican dishes that I am, so I was pleasantly surprised. There's only a couple of spices that flavor the shrimp, but those few flavors pack a punch. Top the shrimp off with crunchy cabbage and fresh made salsa, guacamole, and lime sour crema? Holy good guacamole!

And now I feel I must share this injustice with my readers. My favorite Mexican restaurant in town closed! They had amazing fish-bowl sized Patron margaritas that could knock your socks off. The type of margaritas that make any dinner taste amazing. Sigh. Just like Chinese food, I'm now relegated to only getting my Mexican fix by my own hands. It's just not the same when you have to prepare it and clean up the kitchen that looks like it's had a bomb dropped on it.

So in the meantime, I'll continue to wait patiently for a new Mexican restaurant in town and keep my fingers crossed it's decent. On the other hand, dear readers, if any of you know a restauranteur looking for a new market, there's a HUGE niche where I live due to the complete lack of options. And please hurry- must. have. enchiladas.

Happy Thursday everyone!

Ingredients:

Lime Sour Crema-
1/3 cup fat free sour cream
1 tbsp lime juice
1/2 tsp chipotle chile powder

Chipotle Shrimp-
1/2 lb shrimp, peeled and deveined
1 tsp chipotle chile powder
1 tsp chile powder
1 tsp kosher salt
1 tsp canola oil

Tacos-
tortillas or crunchy taco shells
thinly sliced cabbage
salsa
guacamole
cilantro, roughly chopped

Directions:

1. To make lime sour crema- combine sour cream, lime juice, and chile powder in a small bowl. Mix thoroughly. Set aside.
2. To prepare shrimp- combine shrimp with chile powders and salt. Allow to marinate for 30 minutes. Heat canola oil in a large skillet. When warm, add shrimp. Cook 3-4 minutes or until shrimp are opaque.
3. To prepare tacos- spoon shrimp onto tortilla. Top with lime sour crema, cabbage, salsa, guacamole, and cilantro. Serve immediately.

Sunday in West Virginia

Hubby and I continue our quest of trying new things....

We got a tip from a fellow runner to try running in Ritter Park, which is located in Huntington, WV. The hubby and I had never heard of this park, so we decided to find it. I'm so glad we did, the park is just gorgeous! The park is immaculate and well-manicured. Miles of gravel track loop and wind through the park, where numerous runners huff and puff their way around. There were ducks and squirrels everywhere. This was the place to run. This was my third day running in a row, so I was a bit tired. I'm looking forward to going back when I'm more rested, this is the perfect place to get lost in the beauty around you.

Not the most attractive duck, but I found him charming :)

A long flight of concrete stairs in the park lead to this rose garden high atop the park.

The rose garden even has banquet rooms you can rent for events. The view was just amazing.

The weather was perfect for running. It was about 68º, sunny, no breeze.  I just love fall around here.

More selfies!

A perfectly shaped rose.

Stairs leading to the rose garden, creek below. The creek winds through the park.

Ducks in the creek!

Leaves beginning to change color...

For lunch, the hubby and I headed about 15 minutes from Huntington to Lesage, WV. There's a little restaurant in Lesage that was featured on the Food Network's "Diners, Drive-In's, and Dives" called "Hillbilly Hotdogs". It was time to try it. It's quite the site to check out.

Cold beer is a must after a fall run. I chose a Pumpkin Hard Cider, which I liked. I definitely wouldn't be able to drink a 6-pack of the stuff, but it was a refreshing change.

The picnic table we sat at outside was covered in license plates from all over the country. I, of course, had to find the Oregon one. Visitors can sign the plate from the state they are from! I decided that since technically I live in Kentucky, I couldn't sign the Oregon one. But if we bring my parents back here, they sure can! :)

License plate tree.

Splurging on beer battered onion rings.

I chose the Spicy Chicken Sandwich. Yum! The hubby had a HUGE Bacon Cheeseburger, which was gone before I could even take a picture. LOL.

Checking out the grounds.

Riding the Hillbilly Express.

Pondering how they actually got that van up there...

It was a fun Sunday :)
Happy Monday folks! Have a great week!

Lately: 10/3/13

Haloti chased this poor little groundhog up into a tree at our house yesterday, around 3 pm. The poor little groundhog was so scared, he didn't come down until the middle of the night. I kept checking on him all afternoon yesterday, but he didn't move a muscle. He sat like this all day yesterday. I'm happy to say that when I went to check on him this morning, he was gone. Thank goodness. I was having nightmares of trying to get him down after Googling "getting a groundhog out of a tree video". Watch the video. So glad we don't have to do that :)

The hubby got me some gorgeous fall flowers last week.

The vacuum scares the beejeezus out of Gizmo. Somehow, he managed to score a ride-along to stay safe from that evil, noisy machine.

Made a batch of lunch burritos to freeze for the hubby.

Fall is upon us, and in this house that means breaking out the heating pad for the pups to share.

Haloti stays true to his namesake, and supports those Duckies!
