Rice. I love rice. It's a simple, affordable, and versatile grain product that's very familiar to most Americans. You can fry it, and come up with fried rice or even pan-fried rice cakes. You can bake it inside stuffed peppers, or casseroles loaded with veggies. You can serve it with a saucy stir fry with the sole intention of using it to soak up that sauce. One of my favorite ways to eat rice? In a bowl with a little soy sauce drizzled over it. Simple. Yet delicious. I credit rice with helping our budget when we first moved to Kentucky. Due to its low price, I added rice to a ton of dishes and served it often in our first years in the bluegrass state. We still eat a lot of it, even though things are much different these days. I wish I could get the hubby to enjoy brown rice, but you can't win all the battles :-)
But seriously people, rice is a wonder product. It tastes darn good as leftovers, not changing flavor or texture by the third or fourth day. I always tend to make more than the hubby and I will eat just so I will have leftovers to use for other meals. For example: If we have, say, Chile Garlic Shrimp one night, I'll plan Fried Rice (like this) the next night. Fried Rice is better when it's made with cold, leftover rice, so this one is a no-brainer. If we have Risotto, Risotto Cakes might be on the menu the next night. Leftover rice is perfect for fried rice, rice cakes, casseroles, stuffed peppers, soup, burritos, tacos...
This could go on for a while.

I love wild rice too, I always order it as a side dish at restaurants if it's available. I also like the flavor of brown rice too. It's something different. Maybe someday I'll get the hubby to appreciate them :-)

I loved the Spanish Rice soup, it quickly became one of my favorites! Plus, whenever I make Spanish Rice I always have leftovers. Great fast prep for another meal :-)
