Happy Friday! Happy March Madness!
The NCAA tournament has been going as planned for the hubby, with Kentucky chugging right along. My bracket is looking awfully precarious, though I do have Kentucky winning it all. As long as Kentucky can keep on winning, I'm still in it. But barely, and by the skin of my teeth. I'm in 4th place in the family pool. Out of 5. I guess you can't win em' all.
If you are looking for some impressive chicken dishes to serve up this weekend for the tournament, you came to the right place. Chicken is one of the most versatile meats and proteins, and it also happens to be one of the healthiest. You can pretty much find a recipe for anything to put chicken in. Pizzas, pastas, salads, sandwiches, barbecued, skewered, stir fries, etc. Chicken has been the star of them all. So is it any surprise that yesterday, when I was frantically searching through my blog archives for an idea for a top 25 roundup, that chicken came to mind?
Sorry, rhetorical question :)
Chicken may have been the easy way out, but come on. I bet 99% of us have Googled some sort of chicken recipe in our lifetimes. Or eaten chicken. Or wondered how to make a restaurant chicken dish at home. In other words, chicken was a no-brainer.
Does anyone have fun plans for the weekend? Other than baking my brother's birthday cookies, reading, and hopefully some yoga, I don't. I have a physical therapy appointment today, we'll see what my therapist says about my progress and the outlook of yoga in my immediate future. I'm feeling much better than I was at this time last week, considering last Friday it was pure misery to even sit on the couch, let alone try any stretching. I'm trying to remain optimistic.
In conclusion, it should be quiet in my neck of the woods. Have a great weekend everyone! Here's 25 easy chicken recipes to check out-
