Shrimp Penne


This is one of my favorite recipes!

I say that a lot, don't I? What can I say? I love food!

There is so much color in this dish, which is one of the reasons I love it so. The yellow and red from the peppers, green from the fresh basil, and of course, pink from the shrimp. It's almost too pretty to eat.

Almost.


Start with your fresh produce. Thinly sliced basil, thinly sliced red and yellow peppers, and halved grape tomatoes.


The veggies are simmered in wine. I just love a boozy recipe :)


Saute your peppers in a little bit of olive oil, 3-4 minutes or until tender.


Add in your grape tomatoes and some minced garlic. We really like garlic in our house. Keeps away the vampires!


Add in the wine and simmer 8-10 minutes, or until wine is reduced by half. The veggies really absorb the flavor of the wine in this reduction, so good!

From there, you add in the shrimp and cook until the shrimp are pink. Then add the pasta and mix thoroughly. Garnish with the fresh basil and fresh grated parmesan cheese.


Perfecto! There's nothing left to do but scarf this one down!

Ingredients:
12 ounces penne pasta
2 tbsp olive oil
1 yellow pepper, thinly sliced
1 red pepper, thinly sliced
2 garlic cloves, minced
1 pint grape tomatoes, halved
1 cup dry white wine
1/2 tsp salt
1/2 tsp pepper
1/4 tsp crushed red pepper
1 lb large shrimp
1/4 cup thinly sliced basil
Fresh grated parmesan cheese

Directions:
1. Cook pasta according to package directions. Set aside.
2. Heat oil in a large skillet over medium-high heat. Add bell peppers and saute 3-4 minutes, or until tender. Add garlic, saute for 1 minute. Add grape tomatoes, saute for 2-3 minutes.
3. Add wine, salt, pepper, and crushed red pepper to the pan. Simmer 8-10 minutes, or until wine is reduced by half.
4. Add the shrimp, cook 3 minutes or until shrimp are pink.
5. Add the cooked pasta and cook until thoroughly heated. Stir in the fresh basil, mix to combine. Garnish with parmesan cheese.
6. Plate up and enjoy!
