Slow Cooker Honey Garlic Chicken


Oh yes.

It's that wonderful time of year to pull out your slow cooker again! Admittedly, there are some that use their crock pot throughout the summer. It's true, the slow cooker is a great way to cook something without raising the temperature of the home. However, what usually cooks in a slow cooker? 

Meats. The hubby and I don't eat a lot of meat in the summer, and if we do, it's from the grill. 

Soups and stews. We rarely eat soup and never stew in the summer. 

Those 3 items make up the majority of slow cooker recipes. They are all things that scream "COMFORT!!!" food. And "comfort" food almost always equates to fall and winter weather in my book.

Bean and Rice Burrito Bowls


Y'all know I love Mexican. You should also know that burrito bowls are one of my favorite things ever. Ever. I love tortillas, so I love my burritos, but let's face it. A bowl full of the good stuff you usually cram inside the burrito can feel so much healthier than chowing down on a burrito-sized tortilla.  And, if you like lettuce in your burrito (call me Rabbit, cuz' I sure do!), it's almost like having a salad. Only the dressing is a combination of guacamole, salsa, and creamy beans which intertwine into the best possible partnership. Break out your tortilla chips, peeps, and let's talk burrito bowls!

Grilled Chicken Pesto Pizza


Let me tell you about this pizza. It was an ordeal. This post has been a work in process since, well, ummm, sometime last year. I can never get it to look right. I make it quite regularly, but it's not my prettiest pizza. Last time I made it for pictures, I tried shredded chicken, yellow tomatoes, and fresh mozzarella bocconcini (those little mozzarella balls). It wasn't pretty.

Chicken Guacamole Taquitos


I have a confession:

I've been hitting the guacamole hard this summer. Hard. It's been a serious craving for a good 2 months, and a couple times a week I find myself picking up yet another 2 avocados. 2 avocados makes a perfect amount of guacamole for me to eat in about 3 days (I know I've uttered that sentence before!). I've been snacking on the guac with tortilla chips, stuffing it into burritos, and baking it into these tasty little taquitos.

It's Friday. Wasn't it just Friday? It feels like it. Anyhoo, what better time to get my Recipe Redux series started up again than today? I know it's been a couple of months since I posted one. I picked a spectacularly easy recipe to jump in with- Chicken Souvlaki. Chicken Souvlaki is a popular recipe in our house, I find myself making it again and again. Why? I am a friggin' mess today. For whatever reason (I suspect because the little bro left, sad) I've woken up out of sorts. You know, just one of those days where you drag your butt from bed only to start blubbering over your cup of coffee? And then have 3 dogs looking at you like they might be preparing to commit you as you sit there looking like a hot mess in your pajamas, glasses askew, scrunchie bun on top of your head?

I'm baaaaaack!

First things first, I have my computer! Woot woot! As many of you know, my Mac unceremoniously kicked the bucket last week. If I'd known the Mac was going to do it's final swan song, I would have taken my month-long break then. Instead, I was forced to take another break just when I was getting back into the swing of things. Talk about frustrating. I had ideas swirling, words that needed to be put to paper, recipes to be shared...and no where to put them. I also keep my journal on the computer, so there went that creative outlet too. Since I usually do all my blogging, social media, and catching up on the news in the morning, it was a week of catching up on sleep. Chicken Mole Tacos


Hola! Time for a Mexican-inspired meal!

I know, what's new right? I'm on a major Mexican kick. It's all I want to eat right now. Seriously, I can almost smell enchiladas right now and the only object near me is a cup of coffee. The heart wants what it wants. The hubby has been doing his juice fast for the past week, which leaves me with meal planning for one person- me. And what am I going to eat when I'm feeding just me?

I usually try to post on Mondays, however, yesterday was a tad cray-cray. I felt like I was going from the moment I woke up. I basically woke up, shotgunned 3 coffees, watered the garden, fed the birds, gathered all the house laundry to start, cleaned out the fridge, ran the dishwasher, headed out to the grocery store, and then the feed store. Came home, mowed the lawn, finished the laundry, took a shower, and...

Recipe Redux: Tortilla Soup


Happy Cinco de Mayo! 

Tortilla Soup is one of my ultimate favorite soups. In the world. Like, ever. It would be included in my top 5 list. It's a soup that I have on hand at all times, via the freezer, joining the likes of Clam Chowder, Tomato Soup, and Potato Soup. There's rarely a time I would ever turn down Tortilla Soup. In fact, I can't even think of a reason I would turn up my nose. Well, I guess if I had food poisoning, but then I wouldn't be eating anything...

It's Cinco de Mayo week!

It's no secret that Mexican food and/or Tex Mex are some of my favorite cuisines. I never strictly wait for Cinco de Mayo to make Mexican food, I make it year round. That being said, it's my own personal tradition to eat Mexican food and drink a margarita on Cinco de Mayo. And I love my traditions. I haven't decided what to make this year, but I'm leaning towards enchiladas. I may have gotten my chili gravy down, but I haven't found my ultimate enchilada sauce yet. Uh oh. We are less than 24 hours away from the hubby and I hitting the road to go pick up our little man. To say I'm excited would be an understatement of mammoth proportions. I'm counting down the minutes till it's 8 am here, and I can call the puppy's foster mother to finalize our arrangements. Not that it will help. Happy Friday! Happy March Madness! 

The NCAA tournament has been going as planned for the hubby, with Kentucky chugging right along. My bracket is looking awfully precarious, though I do have Kentucky winning it all. As long as Kentucky can keep on winning, I'm still in it. But barely, and by the skin of my teeth. I'm in 4th place in the family pool. Out of 5. I guess you can't win em' all.

Those flavors that always seem to gel perfectly together. Crunchy, crisp broccoli. Creamy rice. Savory chicken. All married together with cheesy, savory sauce. Guess what today is??

Guess what day it is!!

Today is the kickoff of the NCAA tournament, or "March Madness" as much of the country joyfully calls it. What better food to kick of the tournament than the official food of sports-watching? There is none, these are hands-down the best! The hubby makes them a couple times a year, usually for the Super Bowl, the title game of the NCAA tournament, the Hall of Fame Game in the NFL, occasionally when the Steelers play the Bengals... and that's about it. They are a treat for us, and I look forward to them as such whenever I get them.

I've got all kinds of things to talk to you about today. Slow cookers, chicken carcasses, herbs, veggies, broths, oh my! 

To tell you the truth, I haven't bought chicken broth in years. Years. I keep a can of chicken bouillon with my spices, but that's it. I've been making my own ever since I learned this super-simple way to make broth.

It's hard to find a person who doesn't like chicken fingers and fries. I mean, really. I'm sitting here, racking my brain, trying to think of someone, anyone I've ever met that doesn't like the combination.
