Pumpkin Spice Oreo Cookies


Please forgive me. I'm all about the cookie lately. There's something about fall that makes me want to break out the pumpkin, the cinnamon, the spicy spices that make Spice Cake magical... so when I saw Pumpkin Spice Oreo's at the grocery store, I jumped. I grabbed 2 packages to put in the cart as the hubby rolled his eyes.

"More truffles?" He said, eyeing the cream cheese that was also in the cart.

"No," I said, nose in air. "I'll make something else."

In my head, I racked my brain. I had been planning on truffles. Now what?


I tossed around the idea of cake. Ice cream. Cheesecake bars. And eventually settled on cookies.



I picked out an easy cookie for you today. No chilling, no special rolling-out technique. Just a simple mix/drop/bake kind-of cookie. The results are anything but simple however. You'll end up with a soft, buttery, sweet cookie studded with crumbles of Pumpkin Spice Oreo's. 


They taste like falllllllllllllllll. Like I want to go buy some mums and giant pumpkins to put on the porch, all with a Pumpkin Spice Latte in my hand. And then later, rake up a giant pile of leaves to admire on the porch while I sip a Pumpkin Cider. 

I feel like I mumble and grumble every single year about the end of summer. But, by the time fall is in full swing, I'm into it.

With visions of pumpkin running through my head.


Have you tried these Oreo's yet? They are actually pretty good all on their own.



A little stress release. You could totally put the cookies in the food processor and pulse until they are crumbs. Or you could relief a little tension in your life by beating them. I always choose a beating. I happen to use the flat side of a meat tenderizer, mainly because I'm a kitchen Macgyver like that. Hehe.

Cookies, completely uncomplicated. 

By the by, you could totally make these cookies with whatever kind of Oreo's you want. Lemon? Yes. Mint? Hell yes. S'mores, Brownie Batter, or Cinnamon Krispy? Ummmm, what are you waiting for??

Happy Friday! The hubby and I have another fairly busy weekend ahead of us. The hubby signed up his mom, sister, brother-in-law, all nieces and nephews, and a high-school friends' family for a 5k tomorrow. We've got a big group going, so it should be quite fun. It's a trail run, but they also have an obstacle course and activities for kids. Afterwards, we're all going out for breakfast. That should be interesting! I think everyone's going to have a good time. As for Sunday, I might be making a cake. The hubby's birthday is next week, and he just found out he is going to be going out of town on that day. Booooooo. I still haven't narrowed down a cake choice.  

What kind of cake should I make? Any suggestions? Any special type of cake readers would like to see a recipe for? Anything would help at this point!

Ingredients (makes 18 cookies):

1/2 cup unsalted butter, softened
6 tbsp granulated sugar
6 tbsp light brown sugar
1 egg, room temp
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
10-12 Pumpkin Spice Oreos, crushed

Directions:

1. Preheat oven to 350º. Coat 2 cookie sheets with cooking spray, set aside.
2. In a large bowl, cream butter and sugar until fluffy, 1-2 minutes. Mix in egg. Mix in vanilla.
3. In a separate small bowl, combine flour, soda, and salt. Whisk to combine. Add flour mixture to butter mixture, mix well. Batter will be thick. Fold in crushed Oreo's.
4. Using a 2-tbsp cookie scoop, drop cookies onto sheet. I placed 9 per sheet, the cookies don't spread too much. Bake in preheated oven 8-10 minutes, or until edges are golden brown. Remove from heat. Cool on cookie sheet for 5 minutes, then remove to a cooling rack. Cool completely before storage.

  1. Make him a red velvet chocolate cake topped with (and I don't now that you've ever made this before) a vanilla "boiled" frosting. Yes, you actually cook the frosting on the stove. It goes on creamy but after a day or two it magically turns into a candy like coating. Good either way! He should love it.

    1. Well, Dear Dad, unfortunately boiled vanilla frosting is actually the recipe for my Whipped Cream Frosting. Which is what I normally put on my Red Velvet Cakes. Which is what I usually make for Joyce's birthday.

      We were talking yesterday and it sounds like he's either leaning towards a Creme Brûlée cake or cheesecake. We'll see what happens :)

    1. If you love those Oreos, you will love these! The hubby went nuts, as he loves that spice flavor you get in the cookie. They didn't last long around here :)
