Chicken Guacamole Taquitos


I have a confession:

I've been hitting the guacamole hard this summer. Hard. It's been a serious craving for a good 2 months, and a couple times a week I find myself picking up yet another 2 avocados. 2 avocados makes a perfect amount of guacamole for me to eat in about 3 days (I know I've uttered that sentence before!). I've been snacking on the guac with tortilla chips, stuffing it into burritos, and baking it into these tasty little taquitos. 


It's been avocado-licious. That's right. Avocado-licious. Just wait, that term is going to catch on.


These taquitos make a quick and tasty dinner. You can save even more time by using canned refried beans, which is what usually happens at my house. I always keep refried beans on hand, you never know when you'll be able to make a speedy dinner with them. I put the Spanish Rice on to cook, and got to work stuffing the taquitos. Once they are stuffed, they only need a quick bake in the oven before you get them on the table. I usually serve them with more guacamole and salsa. You know, because you can never go wrong with more guacamole. 


Some people eschew avocados because they are high in calories. Pssshhh. Throw that idea out of the window. Avocados are soooooo good for you. The fat in them is good fat, fat that benefits your hair, your skin, your body. They are full of fiber to help aid in digestion. They have been shown to reduce your risk of certain cancers and protect against depression. I've never worried about avocados and my weight. The older I get, the more I find that when I eat whole foods (even those high in calories and/or fat like avocados, salmon, or olive oil) my weight is easier to manage. Ok, I know you don't need much convincing to make these delicious, guacamole-filled taquitos, so let's talk about this weekend. 

First of all, I'm sitting here in complete shock that it's Monday. I don't think the hubby and I stopped moving all weekend. I started Saturday off at 4 am. Our race registration was at 7 am, so we left the house at 6:45. Yes, it takes me almost 3 hours to wake up. I move with tortoise-level speed in the morning. At any rate, we ran an amazing race with the hubby placing 3rd in his age group and me placing 5th in mine. We are back on the running train, officially. After the race, the hubby and I took his mom out to breakfast which was my last leisurely moment of the day. I then had to race home to get ready, and get my butt over to the party for the hubby's cousin's revealing of the gender for their first baby. Since I was taking pictures, I needed to be there an hour early.


I made it early, and got straight to work. I first took pictures of all the food and decor, because, you know, that's what I'm used to taking pictures of! I then spent most of the party walking around snapping candid photos and trying to record as much as possible for the hubby's cousin and his wife. We didn't get home that night from the party until after midnight, so needless to say, nothing else happened on Saturday. 

Sunday started fast and furious. I peeled my tired body out of bed at 9 am to start editing the party photos. I had to get them done, because our fantasy football draft started out noon. I think I finished editing at 11:15, at which point I went into tornado-mode to pick up the house and throw my hair in a messy bun before people got to my house at 11:45. Whew.

The pictures for the party turned out pretty awesome. The hubby's cousin and his wife seemed positively pleased. I was very nervous prior to the event, but I'm definitely feeling accomplished and proud now that the whole thing is done.


In fact, the mom-to-be asked me to take pictures at her baby shower. I said yes, of course!

After our draft, a bunch of us headed down to the local brewery for pizza and beers. From there, we headed back to the party location to celebrate some more with the hubby's cousin and wife. We ended up hanging out until almost midnight again

And that was Sunday. Gone in the blink of an eye.


Actually, the whole weekend was gone in a blink of an eye. 

What about all of you, dear readers? Did you guys have a great weekend as well? I bet a lot of you still feel like it's the weekend, since it is a holiday weekend. It's definitely Monday for the hubby and I. We have a 4-mile run for our training for Path to The Cure, and then, we go grocery shopping.

Ingredients (serves 2-3):

6 fajita-size tortillas, flour or corn
3/4 cup refried beans
3/4 cup Guacamole
1 cup cooked chicken, shredded
1 cup cheddar cheese, shredded
1/4 cup olive oil
sea salt

Directions:

1. Preheat oven to 425ยบ. Cover a cookie sheet with aluminum foil, set aside. 
2. Spread 2 tbsp beans and 2 tbsp guacamole on each tortilla. Top with 2 tbsp chicken and 2 tbsp cheese. Roll the tortilla up and place seam side down on the cookie sheet. Repeat with all tortillas.
3. Brush olive oil over the top of tortillas. Sprinkle with sea salt. Place sheet in the oven and bake for 15-20 minutes, or until tortillas have started to brown. Remove from oven and allow to cool for 5 minutes. Serve with salsa and more guacamole.

  1. Those taquitos look so good right now. I wish I had an avocado on hand and I'd make them right now for dinner, but my daughter ate the last one. Damn it! LOL

    That is sure one busy weekend. I'm glad she liked your pictures :)

    We didn't do squat, but it was a good thing, because we have been running around like crazy for weeks.

    1. Thanks Rue! I'm glad you had a restful weekend. Even just one weekend of doing nothing is enough to recharge my senses. I think this weekend will be like that for us :)
