Philly-Style Chicken Sandwiches


I put this recipe on my "idea" list for the blog about 6 months ago. I have a sticky note where I keep all my ideas for upcoming blog posts. I add to it, make something, scratch that off, add a couple more ideas, start the process over.
As you can imagine, there's quite a few items on the list. This recipe was at the top for quite a while, but I finally got around to it.

And it. Was. Glorious.

As most of you know, the hubby and I live in an area with seriously limited restaurant options. Not a lot of variety around here. The hubby and I do have a favorite sports bar, called Fat Patty's,  in Ashland though, and I almost always order their "Chicken Philly" when I'm there.  I get into these little ruts where all I can think about is that one food item I've been crushing on. I'm currently in a Chicken Philly-rut at Fat Patty's. 


Did I say that's a bad thing? {chuckles}

It's a really simple sandwich to put together. I found my homemade version to be better than Fat Patty's. It was that good. And that easy. I used leftover meat from a rotisserie chicken I bought at Sam's, which made everything even more straightforward. Sauté the veggies in a little olive oil with salt and pepper before adding the chicken at the very end. Just to coat the meat in a little flavor. Pile the chicken mixture on a hoagie bun, top with provolone, and broil in the oven for 5 minutes. That's it. 

Easy peasy. 


The hubby actually missed out on this one. The poor kid came down with either the flu, or a flu-like cold last Monday. He spent all week alternately shivering and sweating, coughing, blowing his nose, basically the works. On top of all that, he had to work night shifts last week. The flu is currently making the rounds at his office, so there wasn't even someone to cover for him. He's finally starting to feel better, but the cough is hanging on. Anyhoo, he didn't have much of an appetite last week. I made these one night last week when he was anything but hungry. So he left for work (with a bowl of homemade chicken noodle soup tucked under his arm), and I got out my ingredients and my camera. 

The rest was delicious history. This is a hot, satisfying, tantalizingly cheesy sandwich. I probably could have scarfed down 2 or 3 more :)


So, to change the subject... Is anyone else a Saturday Night Live fan? The hubby and I are big fans. Big, big fans. I've been watching the show ever since I was in middle school. I entered the Saturday Night Live picture during the Will Ferrell era. Spartan cheerleaders, Robert Goulet, cowbell fevers, and all. I've watched it ever since. Therefore, I think I'm qualified to tell you that the current season is the worst season I've ever watched. It seemed like last night's 40th anniversary episode came at a desperately needed time. It felt so good to laugh so hard at everything that's happened over the years. I needed to be reminded of what the show can be since I'm so disappointed in what the show currently is. There was a Jeopardy sketch with Will Ferrell as Trebek, Darrell Hammond as Sean Connery, Kate McKinnon as Justine Bieber (I do love her Bieber), and Alec Baldwin as Tony Bennett. I haven't laughed that hard in a long time. If I'd been drinking milk, it would come out of my nose. I loved "Sean Connery" reading the category "Who Reads" as "Whore Ads". I was a bit saddened to see all the classic "Weekend Update" anchors. There's been a long line of superb comedians at the helm, and they currently have Michael Che who can't get through a single segment without flubbing his lines. 

I felt revitalized after watching the anniversary episode. I can only hope Lorne Michaels takes a long, hard look at the show and makes some much-needed changes for next season. It's vital that something change.

Some topics I'm not going to talk about today?

1. We still haven't heard back from Nissan Customer Service. Sigh.
2. Snowpacolypse- we are supposed to get up to 10 inches today! Yikes!
3. The hubby and I watched "The Grand Budapest Hotel" and "Whiplash" yesterday. Awfulness. Neither would I recommend.

Ingredients (makes 1 sandwich):

2 tsp olive oil
1/2 small red pepper, thinly sliced
1/2 small green pepper, thinly sliced
1/4 small onion, thinly sliced
1/4 tsp salt
1/4 tsp pepper
1/2 cup cooked chicken, cut into bite sized pieces
1 hoagie roll
1 slice Provolone cheese

Directions:

1. Preheat oven- turn oven to broil.
2. Heat olive oil in a small skillet over medium heat. When warm, add peppers and onion. Sauté for 2-3 minutes or until vegetables have begun to soften. Add salt and pepper, toss to combine. Add chicken to the pan and sauté for 1 minute, tossing to coat chicken with oil and seasoning. Remove from heat.
3. Cut hoagie roll down the middle, but don't cut all the way through. Open hoagie roll like a book, place on a cookie sheet. Pile chicken mixture on to opened hoagie roll. Tear slice of cheese in half and place halves over chicken mixture. Broil in the oven for 5 minutes, or until the cheese is completely melted.
4. Remove from heat. Place sandwich on a plate and close sandwich. Cut in half if desired. Serve with pickle spears.

    I hope your husband feels better soon and that you don't catch it.

    I'm going to guess that you'll never work with that company again.... that's so ridiculous. If I was going to get my daughter a Nissan, I wouldn't be doing it now.

    I haven't seen Whiplash, but I thought Budapest sucked too.

    1. Luckily, I still haven't caught his cold. Thank goodness! I wasn't expecting much from the Grand Budapest, but it turned much worse while watching it. LOL. I'm just not into that style of movie, the kind that almost feels like a cartoon. I know I should think all the colors and cinematography are beautiful, but really, they annoy me. Is that horrible to admit? Anyhoo, we made it through all the Best Picture nominees and ready for the Oscars tonight! :)
