Deep Dish Butterscotch Pecan Cookie

 

Question: What better way to celebrate the beginning of your weekend than with a deep dish cookie perfectly proportioned for one?

Answer: There is none. 

I'm getting to be somewhat of an expert in single-serving desserts. What can I say? Late at night, when the hubby is away at work, the cravings for cookies start.
I love that these deep dish cookies are super easy and fast to make, plus they make very little mess. Perfect for when the dishwasher is crammed to the hilt with the days foodie experiments, and you don't have enough room to shove in all the tools required to make a full batch of cookies. Plus, who wants to make a whole batch of cookies when they are home alone? That's asking for trouble in my house :)


1 cookie made= no chance at eating an entire batch of cookies.

This cookie is a riff off my Deep Dish Chocolate Chip Cookie for 1. Because, even when you are standing at the kitchen sink in your sweatpants with your hair in messy knot secured by a scrunchy ready to inhale a deep dish cookie, you might feel like eating something more fancy than chocolate chip. Indeed, the pecans added a satisfying crunch and the butterscotch chips gave the cookie a caramel-y flavor. Top the whole thing with a scoop of fresh whipped cream, and I pretty much need a padlock on my kitchen. 

Is it bad I've started to look forward to the hubby's night shifts so I can eat cookies? Lots and lots of cookies??


Well, we are capping up week 2 of no car. Monday will officially be the 2 week mark, and supposedly, the day the car should be done. We haven't heard from these people since they told us they'd have the car for 14 long days, I'm hoping to hear something today. It's been nice getting a lot of things taken care of at the house, but I miss my freedom. And the gym. One awesome thing that has come out of this stretch of being stuck at home is I now have a gazillion recipes in the queue. Ok, maybe not a gazillion, but something like 17. That's almost a month's worth of work, waiting in my draft's. Tis' a good feeling!

I'm going to wrap up this post by telling you all about the odorous skunk I suspect is living in the ditch line beside our house. I've been able to smell him outside the last 4 mornings, and as I was sitting here finishing up this post, I think I heard him. I typically type in the morning in complete quiet, the news distracts me. Which means the TV is either off or on mute. So here I am, lost in thought, when I hear scratching at or around the back door. I was positive whatever it was was scratching. I was also positive that it was the skunk, because Haloti became a giant, puffy fur-ball and began running all over the house, huffing, puffing, growling, and snorting. His typical "I-smell-a-skunk" behavior.

FYI- he even does this routine in the car if he smells a skunk while we are driving. He puffs himself up, runs all over the car, and jumps from the front to back to front and back again. He loves himself some skunk smell. 

Ok, so something is scratching at the back door. I can't help myself, I had to look. I mean, it's 10º here, what if it had been a dog or a cat? They would need help! I turned on the porch light and opened the door, and was smacked in the face with skunk smell. No, I didn't get sprayed, but man, he was definitely the one out there. Not that I saw him. I immediately shut the door, turned off the light, and tried to forget about it. Until he started scratching again! I'm leaving it alone this time, it's almost dawn here. Which means he should go crawl back into his home, right?

Ingredients (makes 1 cookie):

1 tbsp butter, melted
1 tbsp granulated sugar
1 tbsp brown sugar
1 egg yolk
1/4 tsp vanilla extract
1/4 tsp sea salt
1/4 cup flour
1 tbsp pecans, chopped
1 tbsp butterscotch chips

Directions:

1. In a small ramekin, combine butter and sugars. Stir until combined. Mix in egg yolk. Mix in vanilla. Add sea salt and flour, stir until well combined. Mix in pecans and butterscotch chips. 
2. Cook in microwave 35-50 seconds or until cookie looks done. 50 seconds is the magic number for my microwave to produce a perfect cookie. Serve warm, topped with vanilla ice cream or whipped cream.
