Refrigerator Pickles


Just like Mom used to make!

This recipe is straight out of my childhood. When I was younger (and living at home) cucumbers and onions pickled in a vinegar mixture was a summer staple in our house. You could always find a container of them waiting for you in the nice, cold fridge. I'll admit, these have grown on me over the years. When I was really little, I would not eat these. As I got older, I began to nibble on them a bit more. Then a little bit more. Then a lot more. Now, I eat them straight out of the mason jar for a snack.


Two things happened at almost the exact same time that made these pickles happen. First, I saw a recipe for refrigerator pickles on FaceBook. I loved the idea, so I tucked the recipe away for another day. Secondly, a couple days after I spotted the recipe, I spotted these tiny cucumbers at the farmer's market. The lady selling them told me she puts a little salt on these cucumbers and eats them for breakfast. Good deal! They looked perfect for refrigerator pickles. 

And indeed, they were.

It was actually a happy surprise that these taste exactly like what my mom makes. I was never interested in cooking growing up, so my mom never taught me how to make a lot of the things she makes. Now that I'm experimenting in the kitchen, it always shocks me when I create something that tastes like a dish Mom made. It's a walloping reminder that most things in the kitchen have already been done. This recipe is new to me, but people (my mom, whoever taught her the recipe, etc) probably thought of it eons ago. Crazy!


While I'll admit that I love these and they remind me of my childhood, the hubby... eh, not so much. They aren't for him :) 

That's ok, though. More for me! Mwhahahaha!


Did everyone have a great 4th? We ended up having a great time. We stayed at the hubby's sister's house all day, and didn't leave until we were exhausted. So exhausted, we came straight home and pretty much went to bed. We didn't even make it up for fireworks. We must be getting old :) My Smore's Cookie Sandwiches were a huge hit, and were completely ate up prior to dinner. Granted, there were about 10 more people at the barbecue than I was anticipating (definitely should have made double batch!), but there were enough cookies for everyone to get one. I'll be posting that recipe later in the week. It's been so crazy around our house, I haven't even had time to edit those pictures. I haven't even looked at them yet! I might have time later today to edit the photos, but we'll see.

Ingredients:

3 cups sliced cucumber
1 onion, thinly sliced
1 cup water
1 cup granulated sugar
1 cup white vinegar
2 tsp kosher salt

Directions:

1. Combine all items in a large mason jar. Shake to combine. Chill in the fridge for 48 hours before consuming. Mixture will stay good for 2 months!
