Garlic & Herb Roasted Salmon


Salmon!

Oh my gosh you guys. I finally found some acceptable salmon. FINALLY! Oh, it feels like it's been way too long. I used to eat salmon once a week, and now, for the last 5 years, I feel like I have salmon once a blue moon. Until now!

Last time I was at Sam's (you must be thinking, 'Does this girl live at Sam's?') I was perusing the frozen seafood section. I always do, just wishing and hoping they'll have something new. My persistence paid off when I spotted some frozen wild-caught Alaskan salmon fillets. Alarm bells went off in my head. My heart exploded with happiness as I eagerly loaded a big bag into my cart. Just what I'd been waiting for.


As I dug into the filet I roasted, I felt nervous. The last frozen salmon I tried here in Kentucky (almost 5 years ago) tasted and smelled like it was years past its prime. Would this be the same? 

NO!!!!

I rejoiced. I finally get to eat salmon again. Jessica is a happy girl :-)


Now, I used frozen fillets for this recipe. It's definitely not a requirement to use frozen salmon, as this would be extraordinary with fresh salmon. But, it works excellent for frozen too. A very versatile recipe, if you ask me. 


It's really all about the butter. And the garlic. And the fresh herbs. Oh my!


After making your delectable herb butter, it gets slathered all over the salmon in the most delicious way.


A few minutes in the oven, and that's all she wrote. Fish is just so easy to make for dinner. And healthy.



Serve it with a fresh salad, and this meal is perfect for hot weather. It's perfect for cool weather. Heck, it's perfect any time of the year!


How was everyone's weekend? The weather wasn't perfect here, but it let us do what we wanted. For the most part. The hubby was stuck working all day on Saturday, again, so I headed out to watch my nephews play baseball. Another great weekend for the boys, both of their teams won. I got to watch my youngest nephew get 2 hits and run the bases. He was so proud of himself, it was just adorable. We are hoping the hubby doesn't have to work this Saturday as he hasn't had a chance to watch the boys play yet this year. Crossing our fingers!

The hubby actually did get Sunday off though, and he had slated the whole day for yard work. Yes, it was Mother's Day, but his mom was out of town at her brother's house. We are scheduled to take her for a celebration when the hubby's work project is over, so we ended up with the whole day to ourselves. We were determined to get our flower beds in. Unfortunately, Mother Nature had other plans. The hubby was right in the middle of finishing tilling the beds when the skies opened up and let loose with a crazy downpour. It's not really possible to till sopping wet mud, so our plans were dashed. 

We consoled ourselves at the brewery with plenty of brick-fired pizza, crispy hot-wings, and ice-cold tap beer. No complaints here about how our day ended up. 

I hope you all had a great weekend, and all moms had a relaxing Mother's Day! And happy Mother's Day to my wonderful mom! The only thing that would have made the day better would have been spending it with her :-) Love you Mom!

Recipe adapted from: Rasa Malaysia

Ingredients (serves 2):

2 ( 8 oz) frozen salmon fillets, thawed
salt
3 tbsp unsalted butter, melted
3 garlic cloves, minced
fresh basil and thyme, chopped to equal 1 tbsp
1/8 tsp salt
1 tsp lemon juice
dash of black pepper

Directions:

1. Preheat oven to 400º. Line a cookie sheet with parchment paper.
2. Place salmon fillets on parchment paper, season with salt.
3. In a small bowl, combine butter, garlic, herbs, salt, lemon juice, and black pepper. Stir to mix.
4. Distribute butter mixture equally over 2 fillets, making sure it coats the tops and sides. Place pan in oven and bake for 12 minutes. I have a convection oven, so I will tell you my salmon was done in exactly 10 minutes and 30 seconds. A regular oven should be exactly 12 minutes. Remove from heat and serve immediately.

  2. That salmon looks delicious! I will have to get my SIL to pick some up at his Sam's Club and then we can try out this recipe! It was a lovely mother's day here - just me and the hubs as the kids were all gone other places. I get to go out to eat with my daughter this weekend for mother's day and that will be great fun!

  3. I have not been able to find decent salmon around here either. Sam's Club is in the main town we go shopping, and we have already been debating about getting a membership.... you may have given us the nudge we needed to make this happen.!
    Your recipe sounds so delicious, and looks amazing!
    We had the same problem here over the weekend with the garden... to much rain, but it was much needed rain so we were happy to have it :)

    1. It's frustrating to not be able to find the ingredients you want! Not being able to find salmon was a bee in my bonnet :-) I hope you are able to find some!

      We are at the point too where we are starting to get too much rain. I think we have a couple more days of it, then hopefully the weather will change for the better.
