You guys.

We are less than 24 hours away from the hubby and I hitting the road to go pick up our little man. To say I'm excited would be an understatement of mammoth proportions. I'm counting down the minutes till it's 8 am here, and I can call the puppy's foster mother to finalize our arrangements. Not that it will help. My brain is all like, "Puppy, puppy, puppy, puppy, puppy... Is it time to leave yet? No? Puppy, puppy, puppy, puppy..."

Smoked Salmon Chowder


The hubby gets home tomorrow! Hip, hip, hooray! 

I'm excited, can you tell? I guess you could say I've had my fill of Mexican food. I'm ready to have my best friend back. Sure, it's been great fun slacking on the house work. Watching Days of Our Lives with a bowl of ice cream, hair in a scrunchy, living in my pajamas. Feasting on Mexican food all day, all night. It was all very amusing. But I'm done with it now. I like my life for a reason.

Peanut Butter & Jelly Muffins

 

Guess what???

I saw my first hummingbird of the season last night! I was soooooooo excited. The hubby and I were watching "Mad Men" when I caught the first glimpse. Yes, the hubby and I are quite behind on "Mad Men". We actually hadn't watched a single episode since we left Portland. We estimated this left us at the Season 4 finale. However, we estimated this after we had re-watched all of Season 4 and before we subsequently realized we watched it in Portland. For the love. Here's the funny part- both the hubby and I remembered some moments from Season 4, but for the most part, it was all new. We cannot figure out, for the life of us, how we watched all of Season 4 in Oregon, and somehow don't remember most of it. Anyhoo, we've recovered from that faux pas and we've steamed ahead. We just started Season 6. Just as enthralled as ever. In fact, it's making me want to create cocktail recipes and Chicken Kiev for the blog... but back to that hummingbird-

I'm not so sure about the wonderful part, since I've gotten up early for an appointment plus it's raining. But, to look on the bright side-

1. I got to see a big frog this morning, since it's raining. Just chilling on the driveway, enjoying the early spring rise in temperature.

2. I don't have to water anything I planted over the weekend.

How was your weekend? I spent mine around the homestead. I literally did not leave the house. I had no intention of doing that, but somehow it just happened. I woke up with tons of energy on Saturday. The kind of productive, house-cleaning energy that doesn't pop up everyday. You have to take advantage of those moods when they come along, you know what I mean? Which I did on Saturday morning. Hello clean bathrooms, waxed bedroom furniture, and freshly scrubbed baseboards!

Happy Friday!

I still love weekends, even though I'm not technically part of the work force anymore. Fridays were my favorite day of the week as a school-aged kid. It remained my favorite day all the way through college, and even up through all my subsequent jobs. The day I quit my corporate job? Well, it was a Tuesday, but Fridays were still my favorite day at that point. I mean, aren't Fridays the best? When it's 5 o'clock pm after a long workweek, and you still have the entire weekend of possibilities in front of you? I loved that feeling.

Ok, ok, scratch that. The correct terminology is probably more like "If there is one of many food items that epitomize summer, it would be cold pasta". But that doesn't sound as cool, does it?

Smoked Salmon Caesar Salad

Last week, the hubby and I were picking up a few items at our big box warehouse. Just our usual fare- coffee creamer, huge jars of dill pickles (if the hubby eats any more dill pickles, I swear, he will become a dill pickle), tortillas, cheese, etc. The normal stuff. Anyways, we were smack in the middle of mundane, moving our way through the seafood, when I saw smoked salmon on a sale for a reasonable price. I consider $10 a reasonable price for a filet of smoked salmon, whereas it's normally around $20. I've only got 10 gazillion recipes stuffed in my back pocket for smoked salmon, so I grabbed up that fishy fare as fast as I could. And now, I'm wishing I'd picked up more!
